Anyone have any baby friendly tofu recipes to share?
Looking to make something with tofu for my 18-month-old picky eater. Anyone have any ideas? TIA

I have a few recipes at home that I used to, and still make, for the family. The best way to mask the tofu is to use it in baking - like, in a banana bread or other similar types of loafs, or even cakes (carrot cake).
Let me know if you're interested and I'll try to remember to look up the recipes tonight - it might just be worth it for you to invest in a vegetarian cookbook or even a vegetarian baking recipe book

Thanks, Beth! I know you are always making muffins & fresh baked goods. If you have a banana bread recipe, that would be awesome.
I may also look into a cookbook.
ETA: Another question for you Beth b/c I know you are knowledgeable about this stuff. How long is a food made with tofu good for? Can I freeze it? Let's say I am talking about the banana bread for example. TIA
