i don't know how appropriate these are for you dc (they have nuts and dried fruit in them, but that can be changed or eliminated) but my family and i LOVE them!
breakfast cookie:
-2 cups of dark brown sugar -2 1/2 cups of rolled oats -3 1/2 cups of whole wheat flour -1 tablespoon of baking soda -1 teaspoon of baking powder -1 teaspoon of salt -1 1/2 teaspoons of ground cinnamon -3/4 cup of flaxseed meal (or 1/4 cup of unsweetened applesauce, pumpkin, or oil) -2 medium mashed bananas (a little more than 1/2 cup, or 1/2 cup of pumpkin if you didn't use it above) -2 tablespoons of water -3 whole eggs (the original recipe said 5 egg whites but i hate wasting things and had nothing to use the yolks for) -1 1/2 teaspoons of vanilla -3/4 cup of craisins* -1/4 cup of pecans* -1/3 cup of dates*
*you can replace these with any dried fruits or nuts.
1. put the dried fruit in a bowl with boiling water and let soak until you need to add it. 2. preheat oven to 350 degrees. 3. in a large bowl, mix together all of the dry ingredients. 4. make a well in the center and pour in the wet ingredients, mix together slowly. 5. add in the dried fruit and nuts. 6. roll into golf ball sized balls and press to about 1/2 thick on a greased cookie sheet. place cookies about 2" apart. 7. place in oven and cook for 8 minute for chewy cookies or 10-12 for dry cookies. 8. remove from sheets to let cool. 9. after cooled, place in bags (together or individually) and freeze for later use or eat right away.

I replace half the white flour with whole wheat flour and most (if not all) the oil with apple sauce. I use most readily available recipes and just make these changes to make it healthier

IMO these zucchini muffins are healthy and DS goes nuts for them.
1 1/2 C shredded zucchini(squeeze out moisture) 2 C whole wheat pancake mix 1 tsp cinnamon 1 tsp allspice 2 eggs 3/4C brown sugar 1/4 C unsweetened applesauce 2 tsp lemon juice
Mix wet and dry ingredients seperately, then combine, add zucchini last. Put into cupcake tins (3/4 full) bake @375 for 10-15 minutes. For added yumminess lightly dust with podered sugar but not necessary.
