Beef stew recipe?
Does anyone have a really good beef stew recipe? I'm BFing and DS has food allergies (dairy, egg, soy, tree nuts, peanuts) so it can't contain any of those ingredients? If you have a recipe you can share with me, you will be my hero!!!

Re: Beef stew recipe?
i like to follow tyler florence's ultimate beef stew.. i dont follow to precisely.. i use what i have on hand and what looks good from other recipes..
what i did 2 weekends ago was heat about 2 tablespoons of oil in a large skillet. get it nice and hot..i put a sliver of butter in the oil too... season the meat with salt and pepper, dredge in flour and then brown the meat in batches. do not overcrowd the pan...
remove the meat, deglaze the pan with 8oz of beef stock add a bottle of beer and let it simmer/boil/reduce add the meat back in along with baby carrots, a clove of garlic smashed ( i just throw it right in) some sliced celery
i cant remember if i added a can stewed tomatoes or not i think it added some of the tomatoes and used more of the juice from the can. you have to make sure you have enough liquid to just about cover the meat the veggies. cover with a lid and let it simmer for a min of 2 hours.

Re: Beef stew recipe?
Ragout of Beef with Cranberries Yield: 6 servings
1 to 2 tablespoons unsalted butter 1 to 2 tablespoons oil 2 pounds of lean stew meat in 1" chunks 3/4 teaspoon salt pepper 2 large cloves garlic, minced 2 onions (12 ounces total), chopped 1/2 pound mushrooms, sliced 3/4 cup port or red wine 3/4 cup beef broth 2 tablespoons red wine vinegar 1 tablespoon tomato paste 1-1/2 cups cranberries, coarsley chopped 1/3 cup light brown sugar 2 tablespoons flour
1. Melt 1 tablespoon butter and oil in Dutch oven. Brown meat well on all sides. Add oil as needed. Add seasonings, garlic and onions. Add mushrooms, wine, broth, vinegar and tomato paste. Bring to boil, reduce heat and simmer covered about 2 hours or until meat is tender. 2. Combine flour and sugar and toss with cranberries. (Or chop berries with flour and sugar in food processor) Add to stew and cook another 10 minutes. Serve with noodles.
This ages well although cranberries are only distinctively red when first cooked.
You can substitute the butter with oil.

Re: Beef stew recipe?
i made a beef roast/stew last night in the crock pot, its a weight Watchers recipe
1 3/4 lb beef 2 onions, sliced 2 garlic cloves, thinly sliced 3 large carrots, cut into 1/2 inch chunks 2 celery pieces, cut into 1/2 inch chunks 3 tbs tomato paste 2 cups beef broth 1 lb new potatoes, scrubbed and halved. 1 bayleaf Thyme (either 8 sprigs fresh, or i used dried)
sprinkle the beef with salt and pepper, brown on each side, transfer to Crock Pot
spray non stick spray into skillet, add garlic and onions, cooking until onions are soft, about 8 minutes. Transfer to Crock pot
Put 1 cup beef broth and tomato paste in skillet, bring to boil, whisking constantly. Add to crock pot.
Stir in remaining beef broth, carrots, celery, thyme and bayleaf
Push potatoes into the vegetable mixture
Cook on high 5-6 hours or low 10-12 hours.
