Birthday cake questions/advice
I'm looking to do a fire engine themed cake for DS's b-day party but I'm not sure that I want to spend a ton of money on the cake. Also most of the specialty cakes I see have fondant and am wondering if that even tastes good and/or cuts nicely? I was thinking to maybe get a plain white sheet cake with writing from Costco or a supermarket bakery and then just buy cake toppers from Etsy or something. What do you think? Any advice is welcomed! This is the cake I am currently obsessing over:

You can definitely find fondant pieces/topper and make that cake yourself. A couple of my favorite vendors for toppers and pieces is Edible Details and Two Sugar Babies.
For the last couple of years I have been getting fondant cakes from a local woman who bakes out of her house. The cakes have ranges from $50 - 100.
IMO, the fondant cuts fine. A lot of people don't like the taste, but I really like the taste of homemade fondant. Tastes just like marshmallows! I prefer homemade over pre-made stuff you can buy and roll out

That's a cake that definitely doesn't have to be fondant if you don't want that.
I bake cakes on the side and for something like that, unless the customer insists, I would do the overall icing in buttercream and the decorations in fondant or sugarpaste. Fondant iced cakes are more expensive and people don't really eat it and pull it off.
To save time, you can most definitely buy a sheet cake and spruce it up yourself easily. You can cut out the flames yourself ahead of time and order the helmet and firetruck from someone.

I did the EXACT thing you said. I bought a cake from Costco with balloons and sprinkles on it, then ordered a topper from LcCakes
I bought candle holders from Christmas Tree Shop to get more height. lol.

Yes, this seems like a good option. Where can I get a good tasting fondant, or can I make a yummy one?
