Can we start a simple recipe thread for parents?
I'm a FTWM. Now that DD is starting to eat table food I find myself hating dinner time. I was never really a cook at all. I don't even know how to make chicken cutlets I was wondering if we could just post some simple go to recipes that you guys make for your LO's. Any basic and quick meals would be appreciated.

I did a big batch of chicken nuggets for DD. I used boneless chicken thighs, dipped in melted butter, then coated in whole wheat panko and baked. I froze a bunch and then heated them up in the toaster oven for her.
She also does well with meatballs and pasta.
I also keep a box of dr. praeger's fish nuggets in the freezer for nights that I don't have anything else for her.
Her favorite food seems to be peas so I always have them in the freezer and just defrost some in a little water in the microwave.

Super easy meatloaf recipe: 1lb ground turkey, 1pack of stove top stuffing, 1 cup water, 1 egg. Mix well, shape into loaf, cook at 350 for an hour (maybe less if your oven cooks fast, mine is SLOW).
I always keep frozen veggies on hand to steam quickly for DD. Broccoli, peas, green beans are staples.
Fresh asparagus baked in the oven is our new favorite side. Rinse, chop off bottom 2-3 inches, arrange on a baking pan/cookie sheet, drizzle with olive oil, lemon juice (if available), salt & pepper, bake at 415 for 7-10 mins depending on how thick they are. DD eats them like French fries now. (At first I cut it up for her).
I make spaghetti with meat sauce instead of meatballs when I'm being lazy. I just cook ground turkey in a frying pan, break it up into small piece and add to the sauce.
Baked potatoes are easy to make too, and I either cut it up into small pieces or mash the inside with some butter for DD.

For chicken cutlets all you need are thin-cut chicken breasts, dip them in egg, then breadcrumbs, then fry in a pan with some olive oil until the breadcrumbs turn brown and somewhat crunchy on each side. For extra flavor, you could mix garlic powder into the breadcrumbs, or let the chicken marinate in a store bought marinade for a little while before dipping.
I also have an easy recipe for chicken drumsticks. Mix a little garlic powder, salt, a a packet of Goya seasoning into a bowl of flour, about a cup or two, then dip each drumstick into melted butter, into the flour mixture. Put them on a baking sheet lined with foil and bake for about an hour at 425. They come out with a crunchy tasty coating. Not quite KFC, but healthier.
