The only thing I can think of is make up a fake FB acct/new email and link that to Pinterest.

i dont think you have to link FB to your pinterest board if you dont want too. When i signed up i used just my email account it was afterwards i decided to linnk FB to it and even with that i dont allow it to post anythign to FB anyway

That's where I went wrong, I linked my it to my FB account even though I do not allow my pins to show on FB. This FB friend of mine just joined pinterest & found me that way.
Does anyone know if you deactivate your account & then re-activate, do you get to keep your boards & everything you've pinned?

You can unlink your FB
Go here
Scroll down and you'll see Facebook On/Off. Flip it to off.
ETA: Duh. Link https://pinterest.com/settings/
Eta again, I'm really tired today: I recently unlinked my Pinterest from my FB and it still functions normally, no issues at all
