Chicken broth for Infants
I make my own food, but I don't feel like making stock (I know its super easy, i jsut don't feel like it) - is it ok to use the box kind - organic, low sodium from Trader Joe? DS is 8 months. OR - just remind me how easy it is to make and maybe I'll do it

even easier than chicken stock is veggie stock... you can easily make your own! do you want a recipe?

Yeah, I could never find a no sodium stock so I just made my own and froze it. Veggie and chicken are both very easy to make.
Next time you make a chicken soup, add extra water and before you add any salt or extra broth, if you do, strain some out and freeze it in 1/2 cup or cup portions for use in baby recipes.
But as mentioned, I do think the low sodium is okay.

For the chicken stock if I did make it, do I need to use chicken thighs or what pieces?

It is really easy to make. Water 6-8 quarts depending upon the size of your pot and chicken Whole chicken on bone with skin cut into 1/8ths (remove inside and wash chicken) You can do just the legs too.... Bokay garni = cheese cloth with spices - rosemary, bay leaf, thyme, oregano tie all together with twine. Chicken boullion cube (optional) Carrot skinned Root vegetable (parsnip) Potato washed and skinned onion Cook covered in pot until chicken is falling off bone - about 1 -1 1/2 hour.... remove chicken return the bones and skin and simmer for 2 more hours.... Skim the fat. If you want - refrigerate it and then you can just peel the fat off that way.
