chicken cutlets- have a ton - suggestions?
I've done the breaded ones already... the parmesan thing isn't a hit with the kids...
What do you do with your chicken cutlets (marsala recipes not needed... btdt too often!)

Rollatine, cordon bleu, francais, bacon with bbq sauce and cheese, chop up and put on pizza or in tacos, florentine

Cut chicken, add a jar of salsa. Cook.
You can serve over rice Add beans Serve with chips if you cut the chicken up small enough You can put re-fried beans on a pizza crust, top with the salsa chicken and cheese
Grind up some flavored pretzels. Use about 1/2 pretzels and 1/2 breadcrumbs. Coat chicken in honey mustard, then the pretzels/breadcrumbs. Bake/fry. Serve with more sauce. DS loves this b/c he helps me grind the pretzels in the mini food processor.

Flatten out the cutlets and layer fresh mozz/prosciutto/lemon juice and basil..roll each one up and put a toothpick through to hold closed and bake. SO good! You can fill with anything, i just love that combo though

Buy a jar of premade bruschetta ( I like Costco's), put on top, add some balsamic vinegar.
Marinate the chicken in Robusto Italian dressing and cook.
Cut up peppers & onions and make fajitas. I marinate my chicken in beer and spices.

You can chop up the chicken finely until it becomes "ground chicken" and make chicken tacos.
You can also use a can of the Durkee Or Frenchie's Fried onions & bread the cutlets with those instead of bread crumbs. They come out sooooo good!
Or you can do Chicken Salad (Waldorf).

Stovetop grilled (I don't have a bbq). lightly marinate in olive oil, lemon juice, minced garlic, oregano and thyme.
grill and drizzle with olive oil and balsamic vinegar.

A favorite around here (Rob’s usual lunch when he’s working) is Pan Seared Herb chicken. It’s so easy too,
Season cutlets with salt, pepper, a little granulated garlic and some chopped herbs (we like Thyme and Rosemary).
Heat a little olive oil in a large oven proof pan and add some garlic cloves. When the oil is hot – put the chicken breasts in. Cook about 2 minutes until golden then turn and cook 2 minutes on the other side. Add a tablespoon of butter and some of the chopped herbs to the pan and put the whole shebang in an oven pre-heated to 350. Cook about 15 mintues until the chicken breasts are cooked through.
Take out of the oven and remove the chicken. Add about ¼ cup of chicken stock and heat through for about 5 minutes to make the pan sauce. Strain sauce and pour over chicken breasts.
