Chicken Pot Pie... my new favorite thing!
So last year my mom brought DH and I some leftover chicken pot pie that she made. Let me tell you that I had never eaten a chicken pot pie in my life and thought I never would. Well, I tried it and LOVED it. Plus, the recipe is so easy, we have made it constantly throughout the winter! Here is the recipe in case anyone is interested.
Usually on Sunday's we roast a whole chicken and veggies. We take the leftover chicken and cut it up as well as the leftover veggies. You can use whatever vegetables you want. Sometimes we add cut up carrots, potatoes, throw in some frozen corn and peas. Whatever you want.
You put that cut up chicken and veggies in a bowl and add 1 can of cream of celery soup and 1 can of cream of mushroom soup. Mix it all together.
In the dairy section of the supermarket you get the Pilsbury ready made pie crusts. Put one on the bottom of your pie plate, dump in the chicken, veggie and soup mixture and put the second pie crust on top. Cut an "X" in the top of the pie crust.
Bake in the oven at 350 for about an hour until the crust is golden brown.
SO easy, so quick and delicious! Plus, DS seems to love it as well!

Sounds great. Do the carrots & potatoes need to be cooked first? Could I just add a bag of frozen mixed veg?

i can't believe it took you this long to try chicken pot pie!!! its like the ultimate comfort/winter food!! heres another recipe from kraft that i love, too... and it doesn't involve roasting a whole chicken- it uses boneless chicken breast, and frozen veggies YUM!

I love chicken pot pie!
FOr the top crust you can also mix together Bisquick batter and pour it on top. It bakes to make a great crust!
I use cooked and shredded chicken breast, but if you have a roasted chicken, pot pie is a great way to use all the leftover pieces.
For the PP who asked if you need to cook the veggies first - for tougher veggies, like potatoes, I would cook them a little to soften them, but most other veggies you can toss in fresh or get frozen veggies

I know, I almost feel as though I have missed out on this for soooo long!
And the only reason we use the roasted chicken is because we have the leftovers and it ends up being a great way to use them up!

Potatoes I would definitely cook first. But if you don't have the time, they do have cans of sliced potatoes you can get at the supermarket.
As for other frozen veggies. If we don't have enough leftover vegetables from the chicken dinner, we will usually supplement by dumping in some frozen peas or corn or carrots. Works just as good!
