chopped meat question

I bought chopped sirloin at the butcher on Wednesday and kept it in the fridge. I'm going to make meatballs now and now that I took it out of the package the outside is brown and the inside is red. Is this just oxidation? Is it okay? Should I not use it? TIA!!!

if it's a day old and was properly stored, it's still fine... It's just oxidation....

You can smell it right away if it has turned IME.

That happens to me. It's only been 2 days. As long as it smells ok, you should be fine.

Yeah I didn't take it out of the packaging from the butcher... today's friday, got it wednesday... it doesn't smell...

It's fine...

THE COLOR OF RED MEATS . . . . . is not an indication of freshness.
Freshly cut meat is normally a dark color. However, when it is exposed to air, it will "bloom" and turn red. When the meat is ground and then tightly packed, the inside, which is denied oxygen, will be brown. If you break open the meat and let it stand for a short while, it will begin to turn red again.
