We're having Arroz con Pollo right now. It's comforting on a cold day, and it gives me a reason to use my Le Creuset!

my other FAV is french onion soup. I've tried many different recipes, and Ina Garten's is my hands down favorite. I make a few changes (I use all beef stock instead of beef and veal and I also add in thyme) to the soup, and I make it gratinee by topping it of Lyonaisse style with a slice of toasted baguette and cheese and melting it in the broiler.
Here is Ina's recipe for the soup no matter which you use, PLEASE do yourself the favor of avoiding ANY recipe that adds water. what a disappointment. and, all of the best ones have a nice cognac as an ingredient...at least IMHO.
a few other soups are standard in my fall rotation but I have the recipes at home...crab and corn chowder, salmon potato leek are two I can think of off hand.
I want to try a beef and barley if anyone has a good recipe.

Can you share your Osso Busco recipe?
it's not mine, it's lydia's!
Bouquet garni:
1 sprig fresh thyme
2 bay leaves
4 cloves
1 sprig rosemary
Osso buco:
1 cup finely chopped onion
1/4 cup olive oil
1 cup shredded carrot
1 cup finely diced celery
Salt and pepper to taste
1 cup all-purpose flour
2 shanks of veal, cut into 4 pieces, tied widthwise
1/2 cup vegetable oil
2 teaspoons tomato paste
1 cup dry white wine
Rind of 1 orange, cut into strips
Rind of 1 lemon, cut in strips
Juice of 1 orange
1 cup plum tomatoes, crushed
4 cups chicken stock, total
Gremolata:
2 lemon peels, yellow part only, chopped fine
1/4 cup finely chopped Italian parsley
1 clove garlic, finely chopped
For osso buco: Wilt onions in olive oil in heavy braising pan. Add carrots, celery and bouquet garni. Season lightly and simmer on low heat for 10 minutes.
Meanwhile, lightly flour the veal shanks, shaking off any excess. Heat oil in wide skillet and brown shanks on all sides. Add shanks to braising pan, add tomato paste and braise 10 minutes. Add wine, bring to a boil, then add orange and lemon rind and orange juice. Bring to a vigorous boil for 10 minutes.
Add tomatoes and simmer 30 minutes. Add a cup of hot chicken stock, mix, cover and let simmer over low flame for 11/2 hours, adding remaining stock as necessary. Meanwhile, prepare the gremolata.
For gremolata: Toss together all ingredients in a small bowl. Set aside.

Mmmm. Might have to try Osso Bucco next weekend.
I am so proud of myself, yesterday I suceeded in making a pot of sauce that DH likes. Finally, this German gal can make a decent Italian sauce !

I actually didn't make anything I planned to make.
the ingredients I needed were too expensive after I blew my food budget at a beer garden friday night
sooo..I am working with only $70 for the week. and I needed one can of formual and some diapers
I ended up making 2 different sauces, one marina, one meat. eggplant parmiggiano, and the hershey's chocolate cake-I made 12 cupcakes and a loaf cake out of it. hopefully it will see up through this lean week.
