Cookie Swap time! Fave cookie recipe?
Please post yours! here is one I've made quite a few times. Very good!
Chocolate Mint Cookies
3/4 cup butter 1 1/2 cups packed brown sugar 2 tablespoons water 2 cups semisweet chocolate chips 2 eggs 2 1/2 cups all-purpose flour 1 1/4 teaspoons baking soda 1/2 teaspoon salt 36 chocolate mint wafer candies (Andes)
Directions
In a large pan over low heat, cook butter, sugar and water until butter is melted. Add chocolate chips and stir until partially melted. Remove from heat and continue to stir until chocolate is completely melted. Pour into a large bowl and let stand 10 minutes to cool off slightly. At high speed, beat in eggs, one at a time into chocolate mixture. Reduce speed to low and add dry ingredients, beating until blended. Chill dough about 1 hour. Preheat oven to 350 degrees F (175 degrees C). Roll dough into balls and place on ungreased cookie sheet about 2 inches apart. Bake 8-10 minutes. While cookies are baking unwrap mints and divide each in half. When cookies are brought out of the oven, put 1/2 mint on top of each cookie. Let the mint sit for up to 5 minutes until melted, then spread the mint on top of the cookie. Eat and enjoy!

RAINBOW COOKIES
7 oz. almond paste 1 c. softened butter 1 c. sugar 4 eggs, separated 2 c. sifted flour Red food color Green food color Yellow food color 1/2 c. seedless red raspberry jam 1/2 c. apricot preserves 1 (6 oz.) pkg. semi-sweet or milk chocolate morsels Preheat oven to 350 degrees. Generously grease 3 (13 x 9) pans, lined with well greased waxed paper. Break up almond paste into small pieces; add butter, sugar, and egg yolks. Mix with mixer at medium speed until well mixed. Beat in flour with a wooden spoon. Beat egg whites until soft peaks form and add to almond paste mixture; mix well.
Split batter up into 3 bowls (approximately 1 1/2 cups each). Add several drops of red to bowl #1, several drops of green to another, and yellow to the third.
Bake each pan 10-12 minutes or until edges are golden brown. Invert onto wire rack until completely cool.
On large cookie sheet or cutting board, place together: green, raspberry, yellow, apricot, and pink on top. Cover with Saran wrap. Place a heavy board or book on top and put in refrigerator over night.
Next day trim edges. Melt down chocolate morsels; spread over top. Allow to cool completely. Cut into 1/4-inch wide x 1-inch long bars. Enjoy!

Italian Holiday Cookies
Ingredients 1/2 cup butter 3/4 cup white sugar 3 eggs 1 teaspoon vanilla extract 1 teaspoon almond extract 1/4 cup milk 1/4 cup vegetable oil 3 3/4 cups all-purpose flour 5 teaspoons baking powder
4 cups confectioners’ sugar 1/2 cup butter, softened 1 teaspoon vanilla extract 1 teaspoon almond extract 3 tablespoons milk 3 drops red food coloring (optional)
Directions 1 Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. 2 In a large bowl, cream together 1/2 cup butter and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in 1 teaspoon vanilla and 1 teaspoon almond extract, 1/4 cup milk and oil. Combine the flour and baking powder, stir into the wet mixture. Roll dough into 1 inch balls. On a lightly floured surface, roll the balls out into ropes about 5 inches long. Tie into loose knots and place cookies 1 inch apart onto the prepared cookie sheets. 3 Bake for 5 minutes on the bottom shelf and 5 minutes on the top shelf of the preheated oven, until the bottoms of the cookies are golden brown. When cookies are cool, dip them into the icing. 4 To make the icing, cream together the confectioners’ sugar, 1/2 cup butter, and 1 teaspoon vanilla and 1 teaspoon almond extracts. Beat in 3 tablespoons milk, one tablespoon at a time, then stir in the food coloring if desired.

Meringue Cookies
2 egg whites 1/8 tsp salt 1/8 tsp cream of tarter 3/4 cup sugar 1/2 tsp vanilla 2 1/4 cup chocolate chips (in place of chocloate chips you can use broken up candy canes )
Heat oven to 250 degrees. Mix egg whites until foamy. Add salt and cream of tartar. Beat til soft peaks. Add sugar 1 tablespoon at a time. Beat until stiff peaks. Fold in chocolate chips. Drop 2 inches apart on ungreases cookie sheet. Bake for 40-45 minutes.
Pecan Tassies
Dough: 1 stick butter(softened) 3 oz cream cheese (softened) 1 cup flour
You need a mini muffin pan for this recipe.
Mix butter and cream cheese. Gradually add flour and work into dough. Make exactly 24 mini balls of dough and press into mini-muffin pan. (i use the tart shaper from pampered chef to press the dough into the pan--you can use any tart shaper or use the back of a smalls spoon to shape the dough in the muffin pan to lookl ike a little cup)
Filling: 3/4 cup brown sugar 3/4 cup chopped pecans 1 tsp vanilla 1 egg 1 tsp melted butter
Mix all ingredients together. Drop by teaspoonful into dough. (Don't overfill!) Bake at 250 degrees for 30 minutes until golden brown. Remove from pan within 5 minutes of taking out of the oven. Sprinkle with powdered sugar if desired.
These are so yummy!!! Taste like mini pecan pies!! (You can substitute walnuts for the pecans)

Snowballs
1 stick butter 3 tablespoons confectioner sugar 1 cup flour 1 cup chopped walnuts
Combine butter and sugar. Add flour and nuts. Refrigerate dough overnight.
Roll into little balls and bake at 325 degrees for 10-15 minutes until light brown. When almost cool (just very slightly warm or else the sugar will melt) roll in confectioners sugar

It's not Christmas in my house until we make my grandmother's struffoli.
I made these for a cookie swap last year. I made a little pyramid for each person on a holiday plate, and wrapped with cellophane and ribbon. Looked really pretty!
Struffoli (Honey Balls) Makes 10 servings
Dough: 3 cups all-purpose flour (or as needed) 1 tablespoon sugar Grated zest of 1/2 lemon Grated zest of 1/2 orange Pinch salt 4 large eggs 1 tablespoon unsalted butter 1 teaspoon grappa, rum, or vanilla 3 cups vegetable oil (for frying)
Honey Syrup: 2 cups honey 1/2 cup sugar 1/3 cup water Colored candy sprinkles Stir flour, salt, lemon and orange zest in a bowl. Make a well in the center of the bowl and add the eggs, butter and grappa. Blend together with your hands, mixing in all the dry ingredients until smooth.
Remove the dough from the bowl and on a clean surface, lightly knead it for 4 minutes. Wrap in plastic wrap and let it sit at room temperature for 1 hour.
Pull off quarter-size pieces of dough and roll into balls. Drop them into your oil (heated to 350° F). When golden brown (about 3 minutes in the oil) remove with a wire skimmer and let drain on a paper towel.
In a frying pan, blend together honey, sugar and water to make your Honey Syrup. Once blended, add your fried dough to the honey until all evenly coated. Remove from heat onto a platter or small plates and finish with sprinkles.

Betty Crocker Russian Tea Cakes (snowballs)
1 cup butter or margarine, softened 1/2 cup powdered sugar 1 teaspoon vanilla 2 1/4 cups all-purpose flour 3/4 cup finely chopped nuts (I use pecans only) 1/4 teaspoon salt Powdered sugar
Heat oven to 400ºF.
Mix butter, 1/2 cup powdered sugar and the vanilla in large bowl. Stir in flour, nuts and salt until dough holds together.
Shape dough into 1-inch balls. Place about 1 inch apart on ungreased cookie sheet. (My balls get gradually bigger as I get lazy).
Bake 10 to 12 minutes or until set but not brown. Remove from cookie sheet. Cool slightly on wire rack.
Roll warm cookies in powdered sugar; cool on wire rack. Roll in powdered sugar again.

Ooooh - Your Grandma wasn't a Struffoli Nazi like mine was - One of my ONLY memories of my Grandma was rolling and rolling and cutting the struffoli dough w/ a baby butter knife (I was under 3 years old) but my Mom carried on the tradition of rolling and rolling and rolling the dough and then cutting to equally sized tiny pieces - My sister and I used to do ANYTHING to get out of struffoli night ! TORTURE !!
