Cooking Fish

My mom never cooked fish because she just never learned. I really don't know how to cook much or what types. I typically grill fish, but would like to learn other methods. Can anyone steer me in the right direction? Also, what are some good fish to cook that is not salmon, mahi, tilapia or tuna?

I love halibut. You can bake it in the oven. As easy as olive oil, fresh lemon juice and some fresh parsley.

I like to bake or broil it (in addition to grilling). I'll cook pretty much any type of fish. I vary what I put on it....but olive oil, lemon, salt, pepper, and capers are some of my "go-to" ideas.

I like making it in foil packets. I bake on 350 and the length of time depends on the thickness of the fish. I sprinkle some spices and put a pat of butter and a slice of lemon in the foil packet.

Baked flounder.
mix panko bread crumbs with fresh chopped parsley, garlic, lemon zest, a little melted butter and lemon juice to bind.
season fish with salt and paprika, place in a lighly oiled baking dish top with panko mixture and bake 25 minutes at 350.

i either bake it in the oven wrapped in foil (with evoo, garlic, lemon and a little butter) or on the pan. I usually cook it in the pan if I'm making a sauce with it.
