crockpot brisket
Super easy and super delicious! (My Jewish best friend gave me the recipe)
Brisket Onion soup mix 2-3 bottles of beer (just enough beer to cover brisket) Cook in crock pot for 8 hours on low
Serve with mashed potatoes

crockpot brisket
I just made this last night and it's delish! I have a crockpot where the liner can be used as a pot on the stove, so it made it much easier.
For brisket: 1 4-5 lb brisket 1/2 c chopped carrots 1 1/2 c chopped onions 2-4 garlic cloves 2 bay leaves 1 small sprig rosemary a few sprigs thyme 28 oz can whole plum tomatoes, tomatoes only 2/3 c merlot 1/4 c dried cherries
Season the meat with salt and pepper, brown it well on both sides. Remove it from the pan and set aside. Brown the carrot and onions, then add the garlic and cook for another minute.
Put veg, herbs, tomatoes, dried cherries, and wine in the crock put and put the brisket on top. Cook until it is as done as you want it (I did about 10 hours on low and it is just firm enough to stay together when I slice it).
Remove brisket from sauce, put in fridge whole overnight.
Pull the bay leaves, rosemary stem, and thyme stems out of the sauce and puree the solids. You can put it through a strainer if you want it to be smoother. Put in a saucepan and reduce it a bit.
For sauce: 3 c thinly sliced onions 1/2 c dried cherries 1 c merlot
Caramelize the onions in a little evoo. Pour in the wine, reduce by half, add in the cherries. Add in the reduced crock pot sauce. Season with salt and pepper to taste.
This made a LOT of sauce - 6 cups!
ETA that I made the onion/wine mixture last night, and pureed/strained/reduced the crock pot sauce this morning and added the onion/wine mixture before work, so I wasn't using a million pans.
Also, I got the recipe from William Sonoma's website, but I made some changes so that it could be done in the crock and also made changes to my taste.
