Mixed Berry Cobbler
4 cups assorted berries, such as blackberries, blueberries and raspberries 3/4 cup plus 3 Tbsp. sugar, divided 3 Tbsp. MINUTE Tapioca 1/4 tsp. ground cinnamon 3/4 cup water 1 Tbsp. lemon juice 1-1/2 cups all-purpose baking mix 1/3 cup milk
PREHEAT oven to 375°F. Spoon berries into lightly greased 9-inch square baking dish; set aside. Mix 3/4 cup of the sugar, the tapioca and cinnamon in large saucepan; stir in water and lemon juice. Bring to boil over medium-high heat. Pour over berries in baking dish; set aside. STIR baking mix, remaining 3 Tbsp. sugar and the milk in medium bowl until mixture forms soft dough. Drop by heaping tablespoonfuls onto fruit mixture. BAKE 28 to 30 min. or until biscuit topping is golden brown. Cool slightly.

ah!!!!!! u want the easiest darn dessert> bound to get compliments?
wash and dry berries thoroughly...blackberries are awesome with this....
buy lemon curd--in international part of supermarket or a good gourmet store. Whip heavy cream with curd in a chilled bowl. I eye it...so just add one quart and entire curd. layer Entermanns butter loaf or pound cake in trifle dish with curd and berries...

Re: Deserts with berries?
this is so good! EVERYONE LOVES IT! (Use any berry type fruit you want!)
Fruit Salad with Cannoli Cream Ingredients 1/3 Cup whole milk ricotta cheese 2 Tbsp. plus 1/3 Cup whipping cream 3 Tbsp. powdered sugar/confectioners sugar Pinch of ground cinnamon 12 oz. fresh strawberries, hulled and quartered (about 2½ cups) ½ pint fresh raspberries (about 1¼ cups) (Blue berries can be used too) 1 Tbsp. sugar 1 Tbsp fresh lemon juice 2 Kiwi, peeled and cut into ½-inch pieces 3 Tbsp. sliced almonds, toasted Preparation In a medium bowl, stir ricotta and 2 tablespoons of cream to blend. In a large bowl using an electric mixer, beat the remaining 1/3 cup of cream with the powdered sugar and cinnamon until semi-firm peaks form. Fold the ricotta into the whipping cream. (This mixture can be prepared up to four hours ahead. Cover and refrigerate.) In a medium bowl, mix the strawberries, raspberries/blueberries, sugar and lemon juice to combine. Let stand, tossing occasionally, about 20 minutes. Add the kiwi and toss gently. Spoon the fruit mixture into four dessert bowls. Place a dollop of ricotta cream atop the fruit, sprinkle with the almonds, and serve. (Cream topping is great to use on cakes, too) Serves 4

Re: Deserts with berries?
DH and i make a REALLY simple one all the time! we buy an angel food cake mix. mix it up, pour it into the pan... THEN, before you bake it, drop in some berries ( we always use raspberries). then bake it! its sooo good because the berries get all through the cake and it comes out really good! and, angel food cake isn't too bad for ya, either!

Re: Deserts with berries?
What about making crepes and putting fresh berries and homemade whipped creme in them?
Let me know if you'd like the crepe recipe. I have to translate it into English.

Re: Deserts with berries?
this ones really easy:
No-bake cream cheese pie: 1 package of cream cheese (I use low fat...and fat free doesn't work for this recipe) 1 tub of cool whip (or lite cool whip) Sugar...to taste...I like to add just a little bit, maybe 1/4 cup. 1/2 teaspoon vanilla Mix all together and put in pre-made pie crust (graham, chocolate, whatever youd like!) and top the pie with all kinds of fresh berries arranged nicely...sliced strawberries, blueberries, raspberries.
Its very good! You can really do anything with this pie filling...add oreos or other kinds of fruit for ex.
