We just did Disney with my 19 month old.
We only went for five days so I just packed enough of everything except food. The diapers were not that heavy and I had room in my suitcase anyway.
We went shopping while there for milk, Cheerios, etc.
I think this was my list:
diapers wipes regular contents of diaper bag (vaseline, etc.) bibs binkies toothbrush/paste vitamins hairbrush books extra sheets/mattress pad for PNP or crib blanket old toy/new toy for plane bottle and sippies disposable placemats swimsuit swim diapers
clothes - depends on time of year - we had a washer/dryer so we packed light
stroller and carseat - we bought him a seat and it was worth it - he slept the whole flight both ways and he was nice and secure in the seat.
I might be forgetting something but I think that's it.

Missy, are you driving or flying and if you're flying, will you be renting a car so you can stop at Walmart? My lists are different depending on if you have to bring everything or can stop.

Where are you staying? Will you have a car?
Our last trip I had a 12 month old (turned 1 on the trip) and and almost 3 year old.
I shipped a box down (fed ex - ground - a mid size uhaul box cost $18). I filled it with diapers, swimmies, wipes, take a toss silverware, table toppers (disposable placemats), and clorox wipes.
I ordered from garden grocer (yo baby, whole milk, cheerios, snacks, juice boxes, etc).
I'm not sure what you normally use etc - but things to keep in mind - diapers can be bought down there in the gift shops if you run out - BUT some larger sizes are hard to find.
They sell pedialyte if heaven forbid you ever need it in both the gift shops AND the baby care centers in the 4 parks. The baby care centers sell - suntan lotion, children's medicine, carnation formula, gerber food and drinks, some diaper supplies. They are expensive but if you need it at least you know where to get it.
I liked those disposable placemats esp for counter service meals. Since the table isn't always so clean.
Lots of hand sanitizer and wipes.
I brought a bottle strap to attach the girls drinks to the stroller so we didn't lose any during the trip.
Sponge with soap either on it or a small container or soap to wash bottles/cups etc (you can cut up sponges and put soap on them and put them in zip locks and wet them and use them - never tried this but have friends who swear by it).
I decorate my stroller for every trip. There is nothing like going to stroller parking and trying to pick your stroller out of the sea of 100 others (many who have identical ones) if you put some bright colored balloon ribbon on it etc it will be much easier to spot in the crowds AND make it a little less likely for someone to walk with yours.
I bring and old diaper bag (got one at BRU for like $10) and I leave it on the stroller so I don't have to lug it ever where. I only put in it and old change of clothes, diapers, wipes, etc (nothing of value). But it helps so you don't have to lug those things around the park - but at 1 you still have a lot of things to carry around with you.
If you have a lanyard and card holder - I highly recommend it. It is much easier to put your keys to the kingdom card in there. I had several moms tell me they wished they have thought to bring one. You will need your card to get into your room, get into the park, get fast pass tickets etc. You will be pulling it out a lot. It was much easier to just pull it out from around my neck while I held DD than it was to try to dig it out of a purse or wallet over and over.

Best stroller tip I ever got was to bring a cheap fleece blanket. When you park the stroller, throw it over the whole thing and tie it down.
1) helps you identify your stroller 2) Keeps others from stealing your stuff, or a kid grabbing a toy, etc 3) Keeps creatures out. We've seen a lot of birds and squirrels chowing down on cheerios and other snacks. So grossed out to think the kid was going to come out and eat them after a bird or squirrel had been in them.
