Easy dinner recipes
I have decided that I am going to make more an effort to make dinner (I NEVER make it - ha!) for DH and me. However, I need some dinner ideas. I am CLUELESS! Can you offer any good, but easy, recipes for dinner?
TIA

Re: Easy dinner recipes
Cream of mushroom chicken over white rice, so easy and yummy (is from allrecipes.com) 2 tablespoons butter 1 (10.75 ounce) can condensed cream of mushroom soup 1 1/4 cups water, or as needed 1 (12 fluid ounce) can evaporated milk 1 onion, chopped salt and pepper to taste 2 pounds skinless, boneless chicken breast halves - cubed 1 (6 ounce) can sliced mushrooms, drained DIRECTIONS In a large saucepan, melt the butter/margarine. Add the soup, water and milk. Stir together over medium heat. Add the onion, salt and pepper and bring all to a boil. When mixture starts boiling, add the chicken meat and simmer all together until chicken is cooked through. Add the sliced mushrooms and boil over medium heat for about 5 minutes, stirring often. Serve!
Also chilli is so easy, just follow the recipe in the packet and I add chop onions, serve with salad and bread
Tacos/fajita night is a weekly event in a my house lol Chicken salad: In a ziplock bag add chicken breast pepper and italian dressing and let it marinate, than cook the chicken in a pan with a little EVOO. Fix your salad (I like lettuce, onions, white mushrooms, carrots, cherry tomatoes and feta cheese) and add the chicken. Sometimes DH make wraps with the mix

Re: Easy dinner recipes
I think a simple baked chicken is sooo easy and impressive.. and there are so many ways to make it.
One of the easiest:
In a biiiiiiig bowl or pot put the juice of a few lemons (about 2-3), some EVOO (about a Tblspn), a sprinkle of coarse salt, about 5 cloves of minced garlic and some chopped herbs - I use rosemary, thyme & sage.
Clean your whole chicken and loosen skin if you desire. Put the chicken in the lemon juice and herbs and turn it to coat. rub the juice under the skin if you want and in the cavity. Let it sit in there while the oven heats.
Take some of the herbs that were not cut up and shove them in the cavity of the chicken. Put in a cut orange or lemon in the cavity too. Sprinkle with a little salt and pepper, dot with butter and stick it in the oven until it's cooked! I usually make a simple sauce by putting the baking pan on the stove top, stirring in a little wine to deglaze and whisking in a bit of flour and some chicken broth until it coats the back of a spoon.
