Thank you for posting this!!! Here is mine, even though I am no culinary whiz-Tacos!
Just get one of those kits with shells and seasoning. Brown meat and drain (I like turkey because it is low cal). Then add seasoning and water and simmer until done (3 minutes). Put shredded lettuce, sour cream, cheese, tomatoes, hot sauce, salsa in bowls, put out shells and enjoy! I also get tortilla chips and salad greens just in case someone doesn't want an actual taco.
Tada! My genius dinner!

grilled salmon filet (just generous salt, pepper, olive oil, skin side down first on a HOT pan...squeeze a fresh lemon just before removing)
sauteed spinach- 2 bags baby spinach cooked in heated olive oil with a few smashed garlic gloves thrown in (just whack em with the side of your knife..no need to even cut!) salt and pepper
rice or potato

from her site: My friend would use a can of Mexican tomato sauce that was really spicy but it wouldn't be good for the four kids eating dinner so I opted to use regular tomato sauce. (If you aren't serving kids, I recommend the spicy tomato sauce for added flavor and kick). I also decided to throw in some black beans, cilantro and extra seasonings. It turned out really delicious - we all loved it (except for my daughter - picky kid). I topped it with sour cream but also served it with salsa and guacamole on the side. It was quick and easy to make and there was little clean up.
Mexican Rice Casserole:
1 1/2 cups of white rice, prepared per instructions 1 tsp of olive oil 1 lb lean ground beef (I used 96/4) 1/2 sweet yellow onion, diced 3 cloves of garlic, minced 1 tsp paprika 1 tsp chili powder 1 tsp dried cumin 1 tsp garlic powder 1 tsp dried oregano 1/2-1 tsp crushed red pepper flakes Sea salt and fresh cracked pepper, to taste 1 15 oz can of black beans, drained and rinsed (i'm leaving this out, I hate beans! haha) 1 15 oz can of tomato sauce 3-4 tbsp fresh cilantro, chopped (divided) 1-2 cups of shredded cheddar cheese 3-4 tomatoes, sliced thickly Sour cream (topping) Salsa (topping) Guacamole (topping)
Preheat the oven to 350 degrees. Prepare rice per instructions. While the rice is cooking heat the olive oil in a large skillet over medium heat. Once the skillet is hot, add the ground beef, making sure to break it up into crumbles. Cook the beef for 3-4 minutes then add the diced onion and all of the seasonings. Stir until well combined and cook for an additional 10 minutes or until the beef is cooked through and the onion is tender. Add the minced garlic and cook, stirring constantly for an additional 60 seconds. Add the cooked rice, drained and rinsed black beans, tomato sauce and a bit of cilantro (reserving some for garnishing) to the beef and onion mixture. Mix the ingredients thoroughly, taste and re-season if needed.
Coat a large baking dish with cooking spray and pour the rice mixture into the dish, spreading it evenly. Place the tomato slices on top of the rice mixture then top with cheddar cheese.
Spray a piece of tin foil with cooking spray (so the cheese won't stick) and cover the baking dish. Bake for 20 minutes then remove the tin foil. Bake for an additional 5-7 minutes or until the cheese is melted and golden brown. Remove from the oven and let sit for 5 minutes before slicing. Top with a dollop of sour cream and the remaining chopped cilantro. Enjoy.
That looks super delish! I am totally making that tomorrow since my chopped meat didn't defrost in time!

I would have a quesadilla every night if I could....dinners are hard in our household as DH is hypoglycemic and can't have carbs, sugar....(he can certain things...brown rice, sweet potato)
SO pasta is always out or else I'd suggest that!!!!
Dev-you can do gluten free or low carb pasta! Dreamfields makes a great low carb pasta!

I guess I am the only preggo who gets heartburn from rice
I also don't have AC, so I NEVER turn on the oven in my apt in the summer. EVER.
more ideas
tortellini salad with grilled sausage ring (for the salad...cook tortellini and rinse with cold water. allow to drain and chill for as long as possible. add baby spinach, sliced up into strips, small chunks of fresh mozzarella, cherry or grape tomatoes (or diced regular tomatoes), sliced peppers, cucumbers...drizzle with balsamic vinegrette)
I like Premio's sausage rings.
I also do something similar hot, with broccoli rabe steamed then sauteed with garlic, salt, pepper and hit off with fresh parmesan, then thrown in the cooked tortellini with olive oil and a bit of the reserved cooking liquid...maybe some crushed red pepper for heat. served with the grilled sausage.

I am with you on the heartburn from rice! Those recipes sound easy and yummy!

if he can. make them with a corn tortilla. they are staples in our house b/c of where my husband is from....
they are smaller and you'd have to use oil in the pan to keep them from drying out, but I love them.
no corn, it's loaded with sugars. & the whole wheat ones, it's still to much carb for him.

Last night i grilled some chicken and then topped it w/ fresh spinach, red roasted pepper and shredded mozz and popped it in the oven for like 10 mins to melt
I served it w/ roasted broccoli (broccoli florets w/ garlic and EVOO baked at 400 degrees for 20 mins)

Grilled shrimp w/a rub or terriyaki
whatevers in the fridge fajitas
Turkey burgers w/sauteed onions
Hmmmmm. What else.....

Last night I made the easiest salmon recipe:
Take 2 fillets of salmon and wrap in tin foil leaving a small hole in the top.
Pour Soy Vey into the foil pouch until the salmon is coated.
Put in the toaster oven and bake at 350 for 15 mins.
Open the pouches a little wider and bake for another 5 mins.
Serve over frozen organic brown rice from Trader Joes with a veggie of choice. Yum!!
