6 eggs, 1 cup milk (can use skim), 1/2 tsp salt, 1/2 tsp pepper, 1/4 tsp garlic powder, half a cup of ricotta cheese, 1/4 cup grated parmesan - mix everything together with a hand mixer. Fold in 10 oz frozen chopped spinach (thawed and squeezed dry).
Scatter some shredded mozzarella cheese at the bottom of a store bought frozen pie crust (no need to defrost or bake first). Pour in the spinach filling, and then top with some more shredded mozzarella.
Bake at 350 until set (usually 50 mins to 1 hour).
I've added chopped artichoke hearts to this with good results, too, and used different types of cheeses.

Easy Spinach Quiche Recipe
1.5 cups milk, 4 eggs, salt pepper. I sautée fresh spinach, mushrooms and tomatoes and add into egg mixture. Add some cheddar cheese and bacon (optional). I buy whole wheat frozen crust and bathe fur 30-40 minutes.
