What are your favorite healthy, complete meals?

This sounds really strange but its good. It was given to us by someone on a low salt, low fat diet.
Ground turkey with egg noodles, peppers and olives.
1 package ground turkey 3/4 package yolk free egg noodles 2/3 bottle low fat/fat free italian dressing green olives garlic, onion frozen mixed peppers.
Pot One: Boil water for noodles, when almost done add green (salad) olives (about 1/3-1/2 small jar w/ liquid) drain
Pot Two: Sautee onion garlic to taste. Add ground turkey. When almost cooked, add peppers to defrost. Drain any liquid/fat
Combine noodles/olives with turkey/peppers. Add dressing until wet/coated. Reheat and serve.
I'm not a big fan of the peppers - think it adds color and some taste -but usually omit them. The olives add a salty backround.
ETA: I made this for dinner last night. It was very tasty. Haven't had it in a while.

We do this one a lot
* 1 lb. of ground turkey * a few cloves of garlic * 1/2 - 1 cup of chicken stock * 1 lb. spinach * 1 can of cannellini beans
Brown the ground turkey in a skillet until most of the meat is really brown - this takes a few minutes.
Add garlic.
Next de-glaze the pan with some chicken stock, making sure to scrape the bits off the bottom. Add beans and let it all simmer.
Add all the spinach and cover to wilt.
Add more stock as necessary and serve over egg noodles or rice.
This dish is so quick and easy and is perfect for weeknights. DD loves this and you get everything you need in one dish.

this is pretty much how we eat all week:
-turkey burgers on sandwich thins (with skinny cow cheese) and tons of veggies on the side -stuffed peppers with ground turkey -meatloaf- i puree 1/4 an onion, a handful of carrots and a few stalks of celery and add it to ground turkey with seasonings. it makes it super moist. -pasta primavera (with whole wheat pasta)- i made this yesterday, just sauteed zucchini, mushrooms, tomatoes, onions garlic, artichoke hearts and fresh basil, salt and pepper and tossed it with pasta. -a big salad- your choice of lettuce, grilled chicken, and whatever toppings you like- usually we do some variation with chick peas, feta or parmesan shavings, beets, craisins, walnuts, edamame. -baked chicken thighs with a lemon, garlic and rosemary rub with whatever roasted veggie thats in season

Take a bowl of brown rice, top with chopped avocado, tomato, cilantro, cheese, chicken and black beans.
Red Lentil Curry over Quinoa
Spinach and Chicken Pizzas on whole wheat pita bread
i like these blogs because they show what they eat on a daily basis, and the food looks delish!

Just curious how you know the calories? Is it homemade? I find veg indian food (not from a restaurant) to be to high in carbs. Esp when it's eaten with white rice.

I cook all of my own, it is all home made. I input everything into a recipe builder, almost everything is under 200 calories. I also don't eat it with white rice ever, I make one whole wheat paratha or naan, but most times I eat it with not bread at all.

hmm well i consider a lot of the things that i cook as healthy b.c i dont add a lot of butter or oil and everything is cooked from scratch like you...
my favorite vegetarian meal ( we actually made it last night) was lentils with whole wheat elbow pasta. we top it off with grated parm cheese and fresh cracked pepper.
the lentils are cooked with celery, carrots, garlic and just a few tablespoons of a diced tomato or tomato sauce. we fold in the cooked elbows and voila!
its soooo delicious and very healthy, as lentils are excellent for you!

I make- Aaloo Gobi (cauliflower+potato), Bengan Bhurta- (eggplant curry) Daal, Daal makhani (both lentil dishes) Chana masala (chickpea curry) Bhindi (okra) Palak paneer (spinach and cheese) plus ageneral recipe for zucchini, cabbage, other veggies
I also make not so healthy meat dishes for DH, if anyone wants
Tell me what you like and I'd be happy to give them!

Aaloo Gobi 1 head cauliflower,cut into florets 2 white potatoes, peeled and cubed 1 onion, sliced 1 tbs canola oil 1 tsp cumin seeds 2 tsp turmeric 1/2 tsp chili powder (from indian store, otherwise 1 tsp) 1 tsp salt 1 tbs ginger paste 1 tbs garlic paste 2- 8 ounce cans tomato sauce 1. Heat oil over medium heat. Add onion and cumin seeds, cook until onion becomes transluscent and slightly golden. 2.Add all spices, ginger and garlic paste. You might have to add 1 tbs water to prevent it from sticking to the pan. Saute for 1-2 minutes, it keeps the spices from tasti g raw. 3. Add tomato sauce and simmer for another minute. 4. Add cauliflower and potatoes,and stir to coat it completely with tomato mixture. 5. Add 1/4-1/2 cup water. Cover and cook on med-low heat 20 minutes. ---------------------- Bhindi 1 onion, sliced 4 cups okra, frozen or fresh, sliced into 1/4 inch pieces 2 tsp canola oil 2 tsp cumin seeds 1 tsp salt 1 tsp turmeric 1/2 tsp coriander powder 4 tomatoes, diced 1-3 tsp lemon juice
1. Heat oil over medium heat. Add onions and cook until golden. 2. Add all spices and saute for 2 minutes. 3. Add okra, tomato,and lemon juice. Mix with spicesonly until the okra is covered. If you over mix the okra will break apart. 4. Cover and coom over med-low heat for 20 minutes. Its done when the okra doesnt look sticky anymore. –––––––––––––––– Daal 1 cup daal masoor (youcan buy it in an indian market) washed and soaked for 2-3 hours 1/4 tsp turmeric 1 tsp salt 1/2 tsp chili powder 1 tbs lemon juice 1 tomato, diced
Tempering oil- 1 tbs canola oil 1 tsp cumin seeds 1 clove garlic, sliced
1. Add daal, spices, and 2 cups water to saucepan and cook about an hour covered on low heat. It will look like a paste when its done. 2. Add tomato and lemon juice. Cook until its a medkum consistency, not too pasty or watery, should take half anhour. 3. Heat oil in separate frying pan. Add gatlic, cumin seeds and when light brown add to daal and cover right away or it will splatter.

Grilled chicken (marinated in a dijon mix or sprinkled with a tons of herbs and spices). I also make baked breaded chicken with a mix of panko, french's friend onions, and spices and herbs - I marinate the chicken in BBQ sauce first and often use that instead of dipping in egg to make the breading stick.
Grilled veg that have been marinated in balsamic, olive oil, and herbs. This is great as a side dish, cut up on a big salad, or mixed with pasta
Big salads are always great - top it with grilled chicken, or grilled veg, beans, and/or cheese. Dried tart cherries and candied pecans (from TJs) are GREAT on salad.
Saute veggies with olive oil and garlic, and toss with pasta
Stir fries - you get the chinese takeout fix but it's much healther
One thing that we do to make meals healthier is that if we want pasta, we eat it as a side dish (instead of a starch)
Roasting veg brings out so much flavor in them. Tonight I made butternut squash, onion, and garlic, tossed in maple-dijon-olive oil, and roasted. Roasted grape tomatoes are one of my favorite things on earth - roast with balsamic and olive oil, eat as a side dish or toss with pasta.
Brown rice - when you cook it, add flavors into it - replace some of the water with, for ex - white wine, lemon/lime juice, add in herbs and spices - makes it something more exciting

Oh - and super flavorful sauces make even healthier meals more exciting. For instance, I make a jalapeno cranberry sauce when I make the breaded chicken or sometimes even grilled chicken, it makes it much more exciting. Or salsas (roasted corn and black bean, avocado and mango, etc).

I'm not much of a cook, but I enjoy it and hope do get better and do more of it.
I cook chicken a lot with Birds Eye steamed veggies. I also do the Uncle Bens 90 second rice. Baby steps! After a long work day, it's not pretty when I walk through that door.
We do: -turkey burgers -a very easy sausage and peppers - sauté onions in olive oil, add red peppers, and the sausage, DH pours in a bit of beer, add your favorite jarred sauce and simmer -Greek Chicken with diced tomatoes, olives, and feta - sauté thinly sliced (or just halve chicken breast), in olive oil cooking spray on both sides until brown, add 1/4 cup chopped kalamata olives, 1 tbsp minced jarred garlic, and a can of diced tomatoes with oregano, basil, season with pepper. Cover and simmer for 10 minutes. Take off the heat and add 1/4 cup feta, which will soften from the heat of the dish. Serve over rice. -Pita pizzas -I also buy rotisserie chicken every 10 days or so and while you can do a lot of different things, we just slice and eat it.
I'm starting to menu plan more from reading what other posters on here do and also websites like skinny taste.
