filet mignon
Just purchased 2 pieces for dh and I. What do I do with them lol. How do you season them? How long to cook in pan for medium? Should I broil it?

Season with salt and pepper then cook on stovetop in pan on high heat until almost charred (not to burnt tho) then int he oven to cook through.Just a few mins depending onhow you like it,

I season with salt and pepper. Then cook on stove for 2 minutes on each side on high. Then put in the oven for 8 minutes, comes out perfectly pink all through.

I love this recipe from pioneer woman! Some reason it isn't on her site anymore, but it was. It's easy. It's fast, so make sure you have everything measured out before you start cooking.
I change it a bit and add more crushed peppercorns and make a crust on the steak. Leave the crusted steaks out for about 30 mins to bring it to room temperature- don't skip this step!
After cooking, I let the steaks rest under some foil while I make the sauce. When I'm almost done with the sauce, I throw in any juices that have accumulated during the resting to the sauce.
As for how long to cook, it depends on how thick it is. I like medium rare-medium, so her timing seems to work on 2 inch steaks for me. The finger test posted above is a good check.

wrap bacon around them. sear them in a pan for 2min on each side then toss them in the broiler
