For those of you that made prncss sweet potato fries
how do I know when they are done? are they supposed to be soft or kind of crunchy/firm???

I made them for DS. They were soft, which I think was better for DS. He loved them!

Sweet potato tends to wind up being soft. If you want to crisp them up, I would suggest putting then in a toaster over on either toast or broil.

I leave them soft so she can eat them more easily. Sometimes, when I make them for JT and myself, I make them crispier, but I do like them soft, as well. HTH

I make Ava, 12.5 months, chicken "fingers". I cut a chicken breast into strips, dredge in either honey mustard dressing or Italian dressing and then in crushed whole wheat crackers, place on a cookie sheet lined with foil and sprayed with cooking spray for 15 minutes at 375. She LOVES them. I try not to overcook them because they get dry. You can also make life even easier and use the chicken tenderloins, which are even easier, no cutting involved. Plus, they are softer for younger babies.
I serve it with homemade sweet potato "fries". I skin a sweet potato, cut into strips, spray with cooking spray (or you can brush with olive oil if you have a skinny minny who needs some fat), sprinkle with cinnamon and a little bit of brown sugar, lay out on a baking sheet covered with foil and sprayed with cooking spray. Bake for about 10-15 minutes on 375. You have to watch them because depending on how thick or thin you cut them, cooking times will vary. They burn quickly, so really keep an eye on them. For Ava, it stops there, but when JT and I eat them, we mix a couple of tablespoons of light sour cream with one tablespoon of organic maple syrup as a dipping sauce. I would give that to Ava if she didn't have a milk allergy.
