Freezer friendly healthy foods?

I'm looking for some ideas of things to make before I return to work. DH used to do all the cooking when I worked but a lot on the grill and I don't see it happening with the 2 boys up and about.

What are some ideas of meals we can make in advance and freeze that aren't unhealthy? I usually make a ziti or something like that, but that's not too diet-friendly.

I just bought a new cookbook... "Cooking Light - Weeknight" and there is a whole "Make Ahead" section.


I'll write the recipes that are in here...

-vegetable lasagna
-black bean burrito bake
-southwestern meatloaf & baked potatoes
-cheese and hamburger casserole
-buttermilk-brined pork chops
-creamy ham casserole
-creamy chicken and rice casserole
-breakfast sausage casserole

You might be able to find the recipes on the cooking light website otherwise if you really want them I'll type them up for you
