Fried Chicken Recipe

I am making fried chicken for a family picnic and I was wondering if anyone had a good recipe. TIA

I love fried chicken.. and mine is the unhealthiest you can get.

Not so much a recipe.. as little tips and tricks because I don't measure all that much and each batch varies just a bit.. but some things are just 'always':

I rub my chicken down in a mix of Bell's Seasoning, Salt, Pepper, granulated garlic, paprika a dash of cayenne and a pinch of dry mustard. I put this on the skin and under the skin.

Make a mix of buttermilk, fresh parsley, fresh sage and whatever other herbs I have handy. I chop an onion in 8ths and toss that in too.

I take the chicken (rubbed in spice) and soak it in the buttermilk mix overnight.

Drain the chicken.. you don't have to wipe off whatever greens stick to it.

Mix Flour, salt, pepper, (a lot of) paprika, granulated garlic, dry mustard, Bell's seasoning, onion powder, a little cayenne together. Shake the drained chicken in a bag with the flour to coat it nicely with the flour mixture. You might want to let the chicken rest before shaking it again.. you can also sift the flour over the chicken if you are more civilized than me!

Fry the chicken in PEANUT oil.

Drain on brown paper bags.. I don't know why that makes a difference in my mind.. but it does!

Just wanted to add: if you're thinking of skipping the soaking overnight. DON'T. It's what keeps the chicken from absorbing too much grease. (Thereby making it slightly healthier)

Also, use a lot of oil. The chicken should be swimming in it. It should cover 1/2 the chicken. And the paper bag trick is an old white trash trick. I had no idea others did this too.
