Ground beef ideas
Can I have some ground beef ideas? Nothing with pasta or that has to be made in a crockpot though please!

Re: Ground beef ideas
tacos, sloppy joes, my MIL had a recipe for beef stroganoff that used chop meat.
I bought a soup mix for Beef Barley Soup that uses ground beef
maybe spice it up (taco style) and top baked potatoes and cheese?
loaded nachos that's my vote!!
I bet if you go to pilsbury's website - you could find a recipe with ground beef that's in a little packet.
maybe a pizza or something??? bye - i'm going there now!!!
I was right...ummm...

Re: Ground beef ideas
Taco Junk: Mix seasoned (taco seasoning) ground beef with rice (I use instant), salsa, corn, cheese, ranch dressing packet, and black beans. This is really quick and DH LOVES it. Sometimes I stuff taco shells with it.
Pizza Pull-Apart - Ground beef, add sauce and seasonings, mix biscuits in it, add to baking dish and top with cheese before baking.
Rachel Ray has a recipe (I forget the name) but it was large stuffed meatballs served with mashed potatoes. It was really yummy.
Rice balls, Taco Salad, Stuffed peppers, Burgers, Sloppy Joe's, Meatloaf

Re: Ground beef ideas
Our repetoire is the same as the other posters.. various different burgers, meatloaf, stuffed peppers, Shepherd's Pie and different kinds of meatballs (with red sauce, with brown gravy, with sweet and sour sauce..)/
I also make what my mom used to call "American Sauce" Basically you just brown the beef with a little garlic. Add salt and pepper and then stir in big slices of peppers, sliced onion and carrot coins.. really any veggie you want. Add a can of whole tomatoes with the juice (i hand squeeze the canned tomatoes to break them apart and a little splash of red wine. Let it simmer until the veggies start to get tender, correct the seasoning and serve over buttered noodles. It's super easy! I know noodles are pasta.. but it's not really a traditional sauce or spaghetti.
You can also make Jamaican beef pies and ground beef tamales which are a little more labor intensive.. but SOOO delicious!

Re: Ground beef ideas
I love a crescent-topped casserole... I just use this recipe as a guide and then make it however I want. I change up the cheeses, sauces, add/remove veggies, etc...
2 pounds ground beef 1/4 cup chopped onion 2 cans (8 ounces each) tomato sauce 1 envelope spaghetti sauce mix 3/4 cup sour cream 2 cups (8 ounces) shredded part-skim mozzarella cheese 1 tube (8 ounces) refrigerated crescent rolls 2 tablespoons butter, melted 1/3 cup grated Parmesan cheese
Directions In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce and spaghetti sauce mix. Reduce heat; simmer, uncovered, for 5 minutes. Remove from the heat; stir in sour cream. Spoon into a greased 13-in. x 9-in. baking dish. Sprinkle with mozzarella cheese.
Unroll crescent dough into one rectangle; seal seams and perforations. Place over mozzarella cheese. Brush with butter and sprinkle with Parmesan cheese.
Bake, uncovered, at 375° for 25-30 minutes or until golden brown.

Rob told me that he wants me to only do a carb side dish 2x a week... but I am seriously addicted to the 1 carb, 1 protein, 1 veggie idealogy.. so I told him he can suck it. In all seriousness.. that sauce can be made to stand with just bread. It's almost like a tomato based stew type thing. But not a thick gravy.. so it's relatively healthy.
I told Rob about the challenge.. he doesn't think I can do it.. which makes me MORE determined! I can't wait! Would it be cheating to go to the store today to stock up some more before the challenge??

I know, I started looking in my pantry and I'm not sure how Steve expects me NOT to make pasta when we've got tons!
and YES - that's cheating!!!

Re: Ground beef ideas
how many meals do you need?
for 3 separate nights, I would do
Luger Burgers, oven fries, salad toppings chili with corn bread, zucchini sauteed with blackened spices and then have my MIL make picadillo with rice, sliced avocado, salad

Here's a link to the Rachel Ray recipe for Gorgonzola Filled Meatballs with Bay and Onion Creamy Tomato Sauce. She served it with Garlic Mashed Potatoes. Link
I have a really good Sloppy Joe recipe at home. I'll try to find it and post it later.

Re: Ground beef ideas
I dont have an exact recipe but shepard's pie is a good one. I just sauteed diced onions then brown a lb of ground beef. Mix in chopped carrots, green beans, peas, corn, parsnips (whatever I have on hand..can be any or all of these) and some oxtail soup mix (I dont know if they sell it here, my MIL send me the packets from Ireland) but you can also use beef broth and flour or any of those other seasoning packets. Then top with mashed potatoes and bake for about a half hour at about 350.

Re: Ground beef ideas
When I was on Atkin's, I'd make taco salads a lot! Ground beef, taco seasoning, shredded cheese, sour cream - whatever you want to add, over salad - yum!!

If there's a Caribbean or Jamaican food store around, you should be able to find oxtail soup mix.
