Healthy, quick, go to meatless meals
I'm trying to get my diet back on track. I can't eat eggs, meat, or dairy
Just looking for some new ideas.

Have you tried quinoa?
Eggplant or portabellas are hearty
Veggie soups/stews with added beans

Definitely soups!
Baked potato with broccoli- all done in the microwave
Sauté a bunch of veggies (I like chopped yellow and green zucchini, onions, garlic, and portobellos) with fish/shrimp/chicken/quinoa
Salads with beans for protein (back beans or cannelini are my preference)

Veggie fajitas- onions, peppers, mushrooms, salsa- with black beans and avocado with salt and lime on the side. Sometimes rice.

We recently made a yummy dish with Soba noodles, broccoli and shrimp. Also the pre-cut coleslaw mixed with tuna, craisins and Italian dressing is a quick lunch!

Lentil wraps. I keep trader joe's lentils in the house and their wraps. Add anything! Avocado, salsa, hummus, onion, mushroom etc
