HELP me make Roast Beef
I was making roast beef tonight and out of nowhere, my oven starts smoking. Got the roast out and the outside was burned and the inside was very, very rare.
I was roasting at 500 degrees, 20 minutes per pound (as per a recipe I found online).
Not sure what happened.

That sounds way too high. Are you sure it wasn't 500 for the first 20 minutes and then lower it? I cook mine at 375 to brown for 30 minutes and then lower it to 225 and cook it low and slow for about 2 hours depending on how much it weighs.

WAY too high of heat for too long! I do 500 for 20 minutes, then 450 for 15 minutes then I turn it off completely and let it sit for 2-3 hours in the oven.

I cook mine at 375/ half hour per pound and it comes out great. More on the medium/well side.

I usually start mine at about 425 for about half an hour and then lower it to 375 for the rest of the cooking time. I think it usually works out to be about 25 mins per pound, but I use a meat thermometer to be sure it's cooked to the level of "doneness" that I want.

OK, I see I goofed and the heat was too high.
Thanks for everyone's feedback. Looks like I'll be trying roast beef again.

Here is my go to recipe. Works EVERYTIME. 400 degrees for one hour and 15 mins for a medium rare roast beef no matter what size.
I sprinkle light soy sauce, chopped garlic, salt and pepper.
