help with Christmas menu
We're having 8 adults (including ourselves) and 1 child for Christmas dinner this year.
I have so many things I want to make and need to narrow my menu so as not to go completely overboard.
The things being contemplated for a place on the menu are:
Roast pork tenderloin with marinade Roasted, seasoned sweet potatoes Mashed Potatoes w/ garlic Spicy mashed butternut squash Steamed string beans Another veggie (broccoli? corn? carrots?)
Is this way too much for dinner? Is it overboard? It seems like waaaay too many carbs / starches to me and just too many choices. I would cut out the white potatoes, but I'm afraid at least a few of the people coming won't like sweet potatoes. I can cut out the sweet potatoes, but they go so nicely with the pork... I can also cut out the squash. I just thought it would be something different and somewhat seasonal. Just a thought that i came up with when I thought I might have to cut out the sweet potatoes b/c my SIL's don't like them... (I think they don't like them b/c they've only ever tried them carmalized and I don't add any sugar or anything...)
I could also cut out mashed potatoes and sweet potatoes and do spiced roasted red potatoes with the mashed butternut squash...
Any thoughts would be greatly appreciated! I want this dinner to be nice, as it's the first holiday I'm doing and I'm cooking for my ILs!

I'd go with cutting out the mashed potatoes and sweet potatoes and doing the spiced roasted red with mashed butternut squash.
or maybe you can start with a butternut squash soup instead?
also I always love roasted asparagus, just throw on some olive oil, S&P... and even some balsamic vinegar if you like.
maybe add a simple mixed greens salad
