Holiday successes/ failures?

I made a red cabbage with apples & red onions that got rave reviews
Smoked Salmon with creamcheese & dill on cucumber, rave reviews
Stuffed Mushrooms with cream cheese rave reviews
Traditional baked ziti with ricotta & mozz, BUT mixed in a little provolone & sour Cream, rave reviews!

I was happy that everyone went for seconds with pretty much everything I made tonight.

The fra diavolo sauce we made for Christmas Eve was just eh - the sauce was too "fishy," half of the clams never opened, the scallops were blah, at least the shrimp were good and the mussels were to DIE for. Too bad I got really sick from it all.

The prime rib roast I made last night was *almost* perfect - next time instead of starting it at 450 I'll start it at 500 to get a better crust, but the inside was a perfect medium rare, and the horseradish cream sauce was perfect.

Made a 3-Chocolate mousse cake for Christmas Day. It was awesome and came out "almost" professional looking.
Next time I will use my regular springform pan and not the non-stick one so the base layer doesn't pull away from the sides as much.

One failure - my go-to cream puffs came out ehh. The batter was a little wet and I baked them anyway. I think the eggs were larger than usual, so the puffs didn't rise as much as they should have.

Pioneer women's cinnamon rolls with cream cheese frosting instead of her maple frosting were a huge hit.

Baked Brie Strata, huge hit.

Smoked Salomon with watercress creme fraiche on toast points also huge hit.

My turkey was awesome.. but I made it too early and it wound up sitting a bit too long before the guests arrived on Christmas Eve.

My stuffing was the best I've ever made! Sausage and crimini mushrooms with herbs and potato bread!

The sauteed Brussels sprouts leaves with pancetta and the glazed carrots went over HUGE. They were all devoured in record time.

My rum cake was ridiculously good.. but ugly as **** because I put too much brown sugar on the pecans and the top of the cake stuck to the pan... I had to patchwork it back together. Bonus.. it soaked in extra rum glaze!! Chat Icon

My shortbread cookies were VILE. I threw all of them out.

i bought a bunch of zucchinis this year....

success: healthy chocolate cake (ingredients included zucchini, greek yogurt, whole grain flour and honey)

bomb/failure: zucchini frittata thing that i got from the bisquick site. yuck

A trick with turkey. If it's done too soon, cover completely with foil and top that with a wrung out towel in hot water. That will keep it moist and warm ;)

I brought dessert so I made a coconut custard pie (The Neely's recipe) and a chocolate cream pie. The chocolate cream pie will be my new go-to dessert! Delicious topped with whipped cream (especially homemade!)

Christmas Eve - My mom did most of the seafood but my scallops were fabulous and so was my flounder.

Christmas Day - Prime Rib - Perfect!! Everyone said it was the best one yet!! So tender, melt in your mouth delicious.

Only problem, My son & I are so sick with terrible colds so I really didn't enjoy the day.

I made sauerbraten and potato balls for 12 people yesterday, then a roast beef and mashed potatoes for 2 people who don't eat sauerbraten. Both came out delicious if I do say so myself. Eating Sauerbraten leftovers right now and I am relishing in every second of it.Chat Icon

Made baked french toast casserole for brunch and it was delicious but wayyy too sweet for me. It caramelized wonderfully but is very rich. I think I prefer regular french toast.

My turkey was perfection this year.

Linguini with clams came out fantastic.

But my garlic mashed potatoes (usually my go-to recipe) were too dry. I was so disappointed.

But if all that went wrong my very first year hosting Christmas dinner was dry potatoes...I consider it a huge success!!Chat Icon

My prime rib was a perfect medium rare and while I thought I would have a lot of leftovers, people asked for seconds!

My Torta di Ricotta was delicious, however my cream cheese ginger snowflakes were disgusting (went in the pail) and my chewy chocolate gingerbread cookies were hard as a rock (although were salvaged by popping a few at a time in the microwave for 20 seconds)!

failure:
Williams Sonoma creamy mac and cheese from their Comfort Foods cookbook

the cheese sauce was AMAZING but way too many breadcrumbs dried it out.

I did foil wrap it .. but no towel. I have to remember that for next time!

It wasn't dry.. it was just that the skin wasn't crisp when my guests arrived.. which was a bummer!

I finally managed to make rainbow cookies!!! I tried a few years ago and they were so terrible that I was afraid to try again.
Now I'll be making them all the time!

I also made an Oreo cheesecake that was pretty good!
