Homemade chicken "nuggets" recipe
I'd like to make some homemade chicken "nuggets" for my toddler. I've made chicken fingers in the past but he's not a fan of the crunchy topping.
So, I'd like something more nugget-like in the sense that the breading is soft (i'm thinking like McD's chicken nugget soft). Anyone have a recipe for something like this?

This recipe looks pretty good, but it still might have too hard/crispy of an outside than you wanted.
I am so UPSET! I had bookmarked this homemade chicken nugget recipe that looked AMAZING!!! I had been dying to make it never got around to it. This thread reminded me. I went to look at it for this and its missing and when I tried to google it- I can't find it. I don't remember which blog I had found it on but I can't seem to come across it again. It had looked so beyond amazing and had a nice soft but yummy looking crust. It looked just like fast food nuggets but were healthy. But this recipe I found now looks decent.

Try the bisquick chicken finger recipe. The breading reminded me of the mcdonalds chicken nuggets

My DD is a chicken nugget addict and she doesn't like most homemade versions.
She does, however like when I make them this way:
Cut up chicken into desired sized pieces.
Coat chicken bites pieces with egg (I honestly use egg beaters because they are always in the house, they are just so easy)
Mix together equal parts flavored bread crumbs and parmasean cheese and dip the chicken in this mixture next.
Put parchement paper on your baking sheet, spray with Pam, place chicken on the baking sheet and then spray chicken with Pam also.
Bake at 400 for about 20-25 minutes or until done!
