Homemade pizza-what do you use?

A pizza stone or a pizza pan?

If you use the pizza stone, what do you do?

for instance, when I use the pan, I put oil on the pan and put the dough on and then in the oven for a few minutes to cook the dough a big. Then I take it out and put on the sauce and cheese and throw it back in the oven. This prevents a doughy chewy crust that is undercooked.

But not sure how to use the pizza stone.

I use a stone. You need to preheat the stone in the oven for a while. You can build the pizza on a peel (make sure to use a lot of cornmeal so it slides off) and then slide it onto the stone. I've also done it with thin disposable foil pans on top of the stone.

preheat the oven with the stone in at 500 for 30 mins. Prepare the pizza. We recently got a pizza peel, but before we would do it on parchment paper and pop right on the stone. You want the stone super hot, so the dough cooks almost immediately to prevent sticking We use a fork and punch holes all around the pizza to prevent bubbles, and cook for a few mins until a little brown. Take out, add toppings and pop back in until cheese is melted.

We make pizza once a week. We are pro's at it now haha

Before we have the peel, we would build the pizza on parchment paper on a cutting board to transfer it. Transfer with the paper right on the stone.

Yup, I do the parchment paper thing too, forgot to mention that. I've posted about it here before.

Seriously don't know why I never thought of this. It has always been a disaster getting the pizza on the stone from the cutting board. I end up resorting to taking the stone out and making the pizza on the stone and putting the stone back in. Will definitely try the parchment paper. I feel dumb.
