Housewarming party menu

I am finally having friends over to our new house and need to get a menu together.

Here is what I have so far:

Appetizer's

Pigs in a blanket
Hot Artichoke and Spinach Dip
Vegetables and dip
Stuffed mushrooms
Shrimp Cocktail



Salad

Buffet

Lasagna
Chicken Cutlets
Yellow Rice
Broccoli Rabe
Peas and carrots
London Broil
Garlic Bread




Dessert

Cupcake in Ice Cream Cone
Chocolate Chip cookies
Jello

You can also order a Sicilian pizza and ask them to cut them really tiny. And also garlic knots are always good.

I might add a veggie to the buffet. Usually carrots hold up well in a buffet.. zuccini in oil might do well too.. plus, it's YUM!

I would subsititute one of the rices w/ a veggie (sauted green beans maybe).

for appts I'd add cheese and crackers..and maybe chips and salsa...

for the buffet I'd have a green salad, and some bread/rolls, I'd scrap one of the rices and add in a veggie, broccoli rabe, or steamed greenbeans with almonds. Also, instead of garlic mashed, it might be easier on you to have roasted red potatoes (roast in a little olive oil and rosemary)--they'll go with the chicken and the prime rib, and then you don't have to do all the peeling. they hold up well in a buffet setting.

Maybe add a fish to the buffet. I have an awesome recipe I use for grilled salmon that is so easy.


Marinade for a 1/2 pound fillet:

2 tablespoons soy sauce
2 tablespoons brown sugar (light)
2 tablesponns olive oil
2 tablespoons water


Mix it in a bowl and throw it in a baggie with the salmon to marinade. I usually marinade it for 2-4 hours. Discard the marinade when done and throw it on the grill for 6 minutes on each side.


Yummy and easy!
