You knock 'em down! We just gutted almost our entire downstairs. It was all plaster...it was a pain in the A$$ to get down and SOOOOOOOOOOOO messy..there is about an inch of duster EVERYWHERE

Cut through them with a plaster wall cutter. As you open up the wall examine behind them to ensure nothing is there and pull the wall down. Be careful though because there is electrical wiring and other obstructions which could reside behind the wall.
Why do you want to do this? What do you plan to replace them with?

I'm assuming you're talking about a plaster of paris finish. In that case, sand, sand and then some more sanding. Then you'll probably have to skim coat the walls for a smooth finish.

I am looking to do this as well. We are in the process of purchasing our first home and some of the walls are plaster. My DH said that we could sand them down to get a more smooth look.

It is a ton of work. We have plaster walls and had a lot of wallpaper removal - the sanding was by far the worst. There is a fine dust that settles for weeks after - no matter how much you vacuum, wet-wipe or dust.

Yes, you would have to apply plaster and sand which is very messy. Dust gets everywhere. You can try to block off the entire area with a non-porous plastic. This will contain the dust within the area. If your not experienced in this it's best to hire someone.

The best way to smooth out plaster walls is to sand and skim coat. I'd have a pro do it, it will be worth the money.

We gut our kitchen and bathroom and they were plaster walls too.

I actually like the look of plaster walls - they have nice character.
Skim coating takes practice (and a light hand) - I don't think you need to hire someone to do it. It is tedious work - the sanding being the worst of it - but it can be done on your own.

Def worth it and I have a fantastic spackler. he is a little expensive but he's fast, clean and aims for PERFECTION. My DH is in the business of construction and this is the only guy he would ever recommend. He is in Centereach area. Where are you? Let me know if you are interested.
