Once we got the commitment letter from the bank, we got the closing date within a couple of days.

Right-- so you would say the only reason why it gets only a few days in advance, is because of the banks.
But, if you have no bank involvement on either end-- there is no reason why you can't set it further in advance I assume.

for a cash deal you can set it weeks in advance
the one cash deal I closed this year- closed on the contract date

I think we had a week - and it got pushed a little b/c of schedules. We had our commitment letter months ago. It was actually all delayed b/c of the house the sellers are moving to - those owners dragged their feet to set a closing date.

A commitment letter is different from FINAL approval from your Mort. Company. We got a commitment letter months ago,....but we are still waiting for a closing date. It was scheduled and re-scheduled because of title issues and COs.
