i always love bruscetta as an appetizer. and you could make that a few days ahead and then just put it on the toast that day...
also, my mom always did spinach dip- she would cut out the middle of a round pumpernickle bread loaf and put the dip in there, and use the bread that she cut out to dip... SOO good! you could make the dip ahead of time, too Chat Icon

I ususally have the following for appetizers:

Platter with dry sausage, sopressata, (aurrichio) provelone chunks, and olives.

Spinach dip

Breaded Shrimp - clean shrimp, butterfly. First dip in egg, then in breadcrumbs (I add a litte romano cheese to the breadcrumbs) and place on a baking sheet. Bake at 350 for about 10 - 15 minutes.

platter of cheese and procsutto and clam dip. I love the clam dip and it is pretty easy. You can make it in advance, freeze it and then when you need it just pop it in the oven

You can always do a crudite (cut vegetables and dip). Cut the vegtables the day before. You can make the dip 2 days before.

For dip, I alsways buy the Knorr's Vegetable Dip mix. I mix it with a 16 oz. container of sour cream and 1 box of frozen spinach, dethawed and drained. Chill for at least 2 hrs. before serving. It's that easy. People love it.

Re: i need some easy menu suggestions for

OMG, I've got such an easy one that I did for Thanksgiving and it was such a hit:

Brocolli Cheese Spread
1 package of thawed out frozen brocolli diced up
2 tablespoons of mayo
1 cup of shredded mozzarella
1 cup of parmesan (kraft is what I used)
1/4 cup of chopped red peppers
1 garlic clove minced

mix it all together, than bake for about 20 minutes on 325. Then sprinkle 1/2 cup of mozzarella on top and bake for about 5 more minutes

severed with crackers. My family loved this new wave cheese spread so much they are having me make it for Christmas!!
