we do the chicken cutlets that use buttermilk and cornflakes rather than egg and breadcrumbs. Very good,

I made a weight watchers friendly recipe last night and it was great and super easy.
Spray a large pan or pot (I used a non stick dutch oven) with non-stick spray. Add 1 large chopped onion and a couple of cloves of garlic and sautee for 1.5 minutes over medium. Add 2 small sliced bell peppers (I used orange and yellow) and sautee for another minute and a half. Add 2 sliced zucchini and sautee for a few more minutes. Remove veggies (you probably won't get out ALL of the onion but that's fine. Put 1lb of ground beef in pan and cook through (about 7 minutes). Add veggies back in and 1 large can of tomato sauce (I used Muir Glen tomato puree). Tear up a handful of fresh basil and throw it in. Add a little S&P to taste. Cook until sauce is heated (about 5 minutes) and serve over a portion of whole wheat noodles or pasta. I didn't expect much.. but it was really good!
