I suck @ making Rainbow Cookies. Need tips/advice/help.

I used a popular recipe and I swear, I just did not have enough batter to spread. Like at all.


What went wrong?

this is recipe I used.

and can someone tell me different between almond paste and almond extract. Which do you use?? I hear conflicting things. I used paste.

The batter is SUPER DUPER thin! That's totally normal. It's really hard to spread sometimes, but that's okay.

You used almond paste - good! Almond extract you can use in addition, but almond paste is the key. Almond extract is a liquid (like vanilla extract). Almond paste comes in a tube or can.

ITA w/everything you said!! The first time I made rainbow cookies I wanted to throw the dough out because I was convinced I did something wrong - it didn't seem like I had enough dough.

Couple of things you can try. First, warm up the almond paste in your hands a bit, it seems to help it spread better. Also, try to use a non-stick flat spatula to spread the dough. If all else fails, just use your hands to spread the dough, like you're spreading pizza dough. It can be tricky, but once you get the hang of it you'll be fine.

There are also recipes that call for just almond extract. Much easier and very yummy.

I totally gave up and figured I had done something wrong. I wish I had known before.

I use almond filling rather than almond paste. But yes, it is not a lot of dough at all!

I can bake many things....but for some reason, rainbow cookies are not one of them. I have no idea what it is about them....

use a pan that is smaller than 9x13 cookies will be moister and look much better.
