I'm taking the Wilton cake decorating classes at Michael's!
Last night was the first of four classes. We just observed the teacher doing a few things, and learned some basics from the manual. I learned some pretty interesting tricks too - one is to let your cake cool for a few minutes (in the pan) after baking, then put saran wrap over it and put it in the freezer. The moisture from the heat of the cake will get trapped during freezing and make the cake more moist. After about 45 minutes in the freezer, take it out and frost - there will be no crumbs to deal with and the cake(s) are easier to handle (no breaking when you handle them).
Also, she highly recommends using the bake-even cake strips. They make your cake bake nice and flat on top - no hump!
Next week we get to make the Wilton rose!

I totally forgot to use the strip!!! Too busy watching tv and not enough focusing on getting rid of humps

I took that class....it was very basic but we learned some cool tricks. And yes....the strips really work to help the cake bake evenly!!! My roses are still not too good though :(

I made the rose last night and it was pretty darn good if I do say so myself! My stiff frosting wasn't quite stiff enough though so the rose eventually started to lean

I think I a rose challenged!!! No matter what I did they always look funny....like a nice flower but not a rose! Congrats on yours though!! Thats awesome and i am a little jealous!!

I took cake decorating classes years ago. I used to make cakes for special occasions and sell them.
It was fun!
I found that the type of icing you use and temperature of the room/icing, will make a huge difference on how you can make roses and other flowers. Icing too soft will frustrate you.
