I have a few questions I need help with regarding my recent gall bladder attacks and my low-fat diet....

Are there any no-fat foods (besides fruits & veggies) that I can eat an unlimited amount of? (I am always hungry)

DH says that even though something has no fat, if it has carbs it will turn to fat and effect me. Is that true?

And lastly, how far can I trust the label on a package? If it says "0" for fat content, is it really "0" or just less than 1?
