Kale
I am trying to eat more veggies & try new ones. I've never had kale. Is it like spinach? Any good recipes?

i LOVE kale! it's a little tougher than spinach, but better (imo) and you can use it in the same sort of way.
-use it as a wrap fresh (for fallafel, etc.) -blanch it then use it as a wrap (makes it more pliable) -salad -put on a baking sheet, drizzle with olive oil, then sprinkle with salt and parmesean and bake until crisp (about 15 minutes) and you have kale chips! -use it in lasagna/pasta/etc.

I have tried to get into this and honestly I just can't.
I am a huge veggie person and not a picky eater at all.
Kale doesn't get soft like spinach.
But give it a try, hopefully you will disagree with me because it is prob one of the best veggies nutrient wise.
What about swiss chard - have you tried that? It is good and similar to spinach.

I used kale recently to make a kale and sausage soup. Wilting the leaves in broth made it much easier to eat!

yes. you can throw kale in just about any soup. it is great braised with garlic and broth in liquid, but I don't mind the "toughness" so I saute it just like spinach too.
I am also a big chard fan and do the same things to it.
