Re: lamb shoulder chops
DH likes the ones with the round bone. Because I'm too lazy to empty the oven to turn on the broiler, I pan fry them. I season them with kosher salt, garlic powder and a pinch of paprika, add some sliced onions in the pan for more flavor. I spoon the pan juices over the meat as it cooks.
If I do broil them, I season with salt and garlic powder. DH will eat them with BBQ sauce.

about 6 min on each side - DH doesn't like them pink or well done. The other cut has too much gristle in it. DH also prefers the NZ lamb instead of US. I don't eat it, so I buy what he wants. I also buy round bone veal shoulder chops and make them the same way.

Re: lamb shoulder chops
I made a marinade using olive oil, lots of minced garlic, lemon zest, freshly squeezed juice of a lemon, oregano, salt and pepper. I put the lamb in a ziploc bag with the marinade for an hour and then threw everything on to the grill. It was really tasty!

Re: lamb shoulder chops
I usually broil them with rosemary and olive oil seasoning. Last night I tried something different though....I did chives and ginger seasoning instead of the rosemary...delicious!
