Leftover Rotisserie Chicken
Besides making chicken salad, what would you do with it? I'm stuck in a rut.

Sometimes I do a quick chicken pot pie with the leftovers. I have also made a chicken and biscuits bake with it. We do chicken enchiladas with green chile sauce and quick chicken soup using frozen stock I make when I have the bones, etc. I do like it in chicken salad though...I think chicken cooked on the bones has really great flavor!

I agree with all the suggestions above. I use it for:
Soup
Chicken pot pie
Chicken & noodles or dumplings
Mix with bbq sauce and add on top of pizza crust (or toasted pita) with red onions, and mozzarella for a yummy BBQ pizza

I dice it up, add mexican mix cheese and onions and throw it in a wrap and microwave it.
if you don't want to micro, then dice up the chicken, mix in the onions and the cheese and the put it in the wrap.
