this is what i do, its easy but you just need a few hours for sauce to simmer:
i take a large pot, drizzle bottom with olive oil, dice up onions and throw them in there, i brown the onions then turn down the heat and put in 1 can of crushed tomatoes and 1 can of tomato puree. I then fill up one of the cans w/ water almost to the top and add it in the sauce. I add in salt, pepper, and italian seasoning and i let it simmer for a couple of hours and stir occasionally. and thats it!
ETA not sure if you were looking for tomato sauce! or other sauces..

Meat Sauce ---
brown meat (no oil in pan - you dont need it ... theres enough fat that will burn off in there) I use lean beef, pork and veal
in separate pot .. little oil, throw diced onions and garlic in there. let soften for a few minutes. 2 cans crushed tomatoes and fill one of the cans with beef or chicken broth and add that in. I throw a ton of herbs in there (parsley, oregano, basil) some crushed red pepper, salt, pepper and garlic powder .. mix it all in together ... bring to a boil. When it starts boiling I add the browned meat in (drain the fat first)
Reduce heat and simmer for hours. I stir it occasionally and taste to see if it needs more seasoning.

heat up a large deep skillet. Swirl olive oil (I go around the pan about 3-4 times) in. When you can smell the olive oil add a pinch or two of red pepper flakes. Cook for about 30 seconds. Add 5-10 cloves of sliced garlic. Cook only until starting to turn golden (dont over cook). Add a can of Cento San Marazano whole plum tomatos and a handful of torn basil. Add salt and pepper. Lower heat, cover and simmer for about 15 minutes stiring occassionally and breaking up the whole tomatos. Yummy yummy yummy
