Re: Mashed Potato Recipe
i'm irish and so i don't like to mess around with a good thing. for me, the key to good mashed potatoes is using whole milk and boiling your butter and milk together and then adding to the potatoes. you can always add mroe butter or milk to taste, if needed. to add a little flavor without losing the true potato flavor, i like to add finely chopped scalliions.

Tangy Casserole Potatoes
12 medium size all purpose potatoes peeled & Halved 1/2 cup butter or margarine 8 oz cream cheese cut in small pieces 1 cup (8 oz) sour cream 2 tsp salt 1/4 tsp pepper 1/4 tsp paprika
Put potatoes & enough water to cover in a large pot on high heat. Cover & bring to a boil. Reduce heat to medium. Partially cover & cook at low boil 20 minutes or until tender. Drain & add cream cheese, remove from heat. Beat with a wooden spoon until cream cheese is melted & mixture fairly smooth. Mix potatoes w/mixer into butter mixture. Add sour cream, salt & pepper and beat until smooth. Spread evenly into a greased 13x9x2 baking dish or a shallow 2 1/2 casserole. Sprinkle with paprika. Cover & refrigerate over night or until cooking time. Remove from refrigerator 15 minutes before baking. Uncover & bake in preheated 350• oven for about 35 minutes until heated through & slight crust forms.

Re: Mashed Potato Recipe
I like to add some garlic (2 cloves finely chopped) and 2-3 Tbsps of shredded Parmesan or asiago cheese.
You can also add some fresh chopped chives after you plate it for decoration

Re: Mashed Potato Recipe
I like making sour scream and onion mashed potatoes. Scallions, green onions mixed with salt, milk butter and sour cream. So yummy and easy!

Re: Mashed Potato Recipe
I actually salt the potato water as I am cooking the potatoes and then I smash them with a potato smasher and then add butter and use a hand mixer with milk to make them creamy..
