mashed potato recipe
any good mashed potato recipe people would like to share? TIA!

I salt the water, cut potatoes to a uniform size and boil until soft. Then I either use a ricer or a masher to pulverize them.
I always add some butter first.. because I love the taste and if I'm having mashed taters I am not too worried about my diet. If I use a ricer I cut the butter small and stir it in. If I use a masher I just toss it in and smash it with the potatoes.
I mix and match from the following list of liquids:
Evaporated milk Cream Buttermilk
Now.. I can stop there and throw in a little s&p and we're good.
But sometimes I don't stop. I can't help myself.
Sometimes I have been known to throw in:
chopped green onion, crumbled bacon and cheddar cheese
or
Chives and sour cream
or
soft roasted garlic
or
I'll press some fresh garlic oil in and then chop the clove up and throw it in.
or
some wasabi powder
They are such a nice easy vehicle for flavor that you can pretty much add anything. As long as you get the texture right (not too much liquid or butter) - you can really play and have fun with them!

oh boy. I do the same as above.
I almost always use yukons. They are so buttery alone so the creaminess is just wonderful. Then add butter.
Don't cheap out on the butter and please use real butter. No sense in dieting them down.
I use whole milk, butter, salt & pepper. (white pepper)
Sour cream and garlic on occassion.
I use an electric hand mixer if I want them more whipped.

yukons, boil them til soft. when i dump then in to the strainer, i put the butter in the hot pot to melt it and some of the FF milk or FF hald and half if I have it and a big spoon of sour cream. I use my electric mixer. Add more milk as needed to get the consitencey you want. Black pepper to taste!
Garlic mashed... i put chopped garlic in the butter in the pot, before I add the potatoes... so it flavors the butter!

We only use red potatoes and love them. I keep skins on, not lazy just like the extra protein, everyone loves them.
I slice them in half, boil the, strain them, put them in a mixxing bowl with a little butter and some milk and mix together with a mixer, maybe add a little more milk for a smooth blended texture and serve with butter on top.
Sometimes i boil potatoes with some minced garlic and when i strain i transfer the garlic over so when i mix it all up, i have a nice tasty gralic mashed potatoes, those are yummy too.

I make the mashed potatoes, then layer in a baking dish: mashed potatoes layer of mozzarella mashed potatoes top with melted breadcrumbs and butter.
Bake at 375 until golden brown.
