Meatloaf Recipes

What do you ladies use? DH really wants me to make it, and I think I've made it once before but don't remember where I got the recipe from.

Also all the ones I keep finding now include bacon - and want to make it without it.

Meatloaf Recipes

I use meatloaf mix (veal, pork, beef) and I use Italian breadcrumps (that's all I keep in the house).. I actually make it a few different ways:
1) Italian style - w/ grated cheese, parsley, garlic, and marinara sauce on top (I always have in house)
2) Asian style - soy sauce, garlic, ginger, hoisin, both inside and on top.
3) Irish style - ketchup & Worcestershire sauce

Paula Deen's old fashioned meatloaf

This is my go to recipe. It uses oats instead of bread crumbs which sounds strange but it comes out great. I leave out the bell pepper often since I don't usually keep them in the house but I like it with or without them.

Better Homes and Gardens Cookbook recipe for Best Loved Meatloaf

Let me tell you, I HATE meatloaf but this recipe is so delicious. To die for!!! DH loves it. The glaze you make at the end tastes SOOO good, I tend to like it sweeter so I use a bit more brown sugar.


Meat Loaf
Prep: 20 minutes
Bake: 1 hour 10 minutes

2 eggs, beaten
3/4 cup milk
2/3 cup fine dry bread crumbs
1/4 cup finely chopped onion
1 tablespoon parsley
1 teaspoon salt
1/2 teaspoon dried leaf sage, basil, or oregano, crushed (I use oregano only for this, bc I just don't like sage or basil)
1/8 teaspoon black pepper (I omit this, hate black pepper)
1-1/2 pounds lean ground beef, lamb, or pork (I use beef only)
1/4 cup ketchup
2 tablespoons packed brown sugar
1 teaspoon dry mustard

Directions
1. In a medium bowl combine eggs and milk; stir in bread crumbs, onion, parsley, salt, sage, and pepper. Add ground meat; mix well. Lightly pat mixture into an 8x4x2-inch loaf pan.

2. Bake in a 350 degree F oven for 1 to 1-1/4 hours or until internal temperature registers 160 degrees F. Spoon off fat. In a bowl combine ketchup, sugar, and mustard; spread over meat. Bake for 10 minutes more. Let stand for 10 minutes before cutting into eight slices.

3. Makes 8 servings

I base mine off Paula Deen's Cheeseburger Meatloaf

I make it much leaner by using a mixture lean beef & lean ground chicken, low fat mayo, reduced fat cheese. I also omit the bacon, & onions on top. But I add finely chopped onions inside.

Just made it last week. It's really the only meatloaf I make, unless I do a more Italian one.

I use my friends recipe. Super easy, super yummy!
1lb meat
1 full sleeve of. Saltines crushed down
Egg
Milk
Garlic salt
Paprika
Parsley
Glob of ketchup

I don't really use a recipe, I just eyeball everything:

Chopped meat
Egg
Seasoned breadcrumbs
Ketchup
Worcestershire sauce
Garlic powder
Pepper
Salt
Onion powder

I mix it all together and form the loaf, then I top in with some panko to give it a little crunch.

This is how I make it. I love the brown sugar and I also add small diced red pepper and mushrooms. I actually sauté chopped garlic, onions, red peppers and mushrooms together first using olive oil. Then I mix it. I wouldn't mix it raw.

This is the absolute best meatloaf on this planet. I use meatloaf mix (beef, veal, and pork) instead of just the beef and pork the recipe calls for.

Once I smother the loaf with glaze, I lay strips of raw bacon across the top to completely cover the meatloaf and then bake. Truly amazing!

Best meatloaf ever

ETA: I just realized you said you didn't want bacon. You can just omit my added step. It's not part of the original recipe anyway.

I just throw in an egg and panko and parmesan cheese, garlic, salt pepper, oregano, parsley

or I mix it with Lipton onion soup packet and top it with bbq sauce.

I always do it differently. Do you make meatballs? Do whatever you would for meatballs and it will be fine.

I do what the recipe says, and mix it in raw. I actually keep frozen chopped up onion an toss that right in. Cooks while in the meatloaf and tastes awesome!

The easiest meatloaf I have ever made came from the recipe on a Stove Top Stuffing Box! Just started making it this way for the past 2 months.

Only thing I do different is I cut the recipe in half bc 2 lbs. of meat if way too much for just the 2 of us, I add a small chopped onion to the mix and I substitute BBQ sauce with Ketchup bc I'm not a fan of that smokey flavor in Meatloaf. It's so friggin good and super easy.

P.S. I also make 2 small loaves out of it instead of one and I do that in a glass 9x12 pyrex pan

This looks really easy! Did you cut the whole recipe since you cut the meat in half?

I use meatloaf mix (beef, pork, veal), add in diced sauteed onion, salt, italian bread crumbs, an egg, worcestshire sauce, squirt ketchup or bbq sauce. No garlic or pepper for us.
Sometimes I use the Lipton onion soup mix instead of diced onion, I add the mix to some hot water, let it sit a bit then add to the meat.

Free form it, place on a foil lined baking sheet and glaze with ketchup or bbq sauce and brown sugar.

I sometimes add sauteed mushrooms to the mix.

Love it cold the next day.

I cut it all in half accordingly. 1 lb meatloaf, 1 egg, 1/2 box stuffing (actually, I put more the 3/4 the box of stuffing-it's so good) 1/2 cup water, etc

I use meatloaf mix (veal, prok, beef). I sautee a green and yellow pepper up with some onion and garlic until translucent and let cool. To the mix i add, salt, pepper, egg, bread crumbs, worstechire sauce, tomato sauce and the pepper mix. Once combined top the whole thing with bacon, compeltely cover it and bake. Amazing......

I use turkey.

ground turkey
wortershire
chopped onion
garlic
italian breadcrumbs
egg
milk (keeps it super moist)
a few tbs of tomato sauce
black pepper

I cover it in ketchup and then put bacon on top.

I use the rest of the can of tomato sauce, thinned with half a can of water and pour it around it with chopped onion and some ketchuptoo to make extra sauce to spoon over it.

I use the recipe on the liptons onion soup mix and it comes out great and is super easy

2 lbs ground beef
1 package liptons onion soup mix
3/4 cup bread crumbs
1/3 cup ketchup
2 eggs
3/4 cup water

mix together and bake for 1 hour at 350

I use meat loaf mix for meat portion

DH LOVES, LOVES, LOVES it this way.

I use this, but the beefy onion mix, and I add shredded mozzarella sometimes. If you use less than 2lbs of beef, use less water as well. Really good!
