Menu of the week 4/30

i have my menu set so, i'll get the ball rolling on this week's menu threadChat Icon

Monday- skinny taste pulled pork sliders and a broccoli cole slaw

Tuesday- Beef tacos with all the fixings

Wednesday- mini chicken meatball with pasta and vegetable soup

Thursday-leftovers

Friday- chicken thighs in a balsamic and garlic sauce with roasted veggies

i don't include sat/sun b/c we eat leftovers or have some sort of event where food is provided.
or i'll make a quick pasta with sauce

I have a friend from out of town arriving on Thursday, so I have a short cooking week -

Saturday -

Crock pot baby back ribs , homemade cornbread and cole slaw

Sunday - whole roasted chicken with herbs, stuffing, burnt broccoli

Monday - veal milanese, warmed italian bread

Tuesday - chicken salad "BLTs" with Sunday's leftover chicken, chips

Wednesday - fried whole wheat gnocchi with pesto, green salad

Thurs/Fri/Sat - out

Sunday- Going to see friends
Monday- Boneless turkey breast stuffed with vegetables, wild rice pilaf
Tuesday-Meatloaf,steamed spinach, oven roasted potatoes.
Wednesday- Sausages and peppers on rolls and melted mozzarella cheese.
Thursday- Turkey burgers on warm rolls, grren tossed salad.
Friday- Marinated boneless skinless chicken thighs, green vegetables, rice.
Saturday- Chefs night off!

SAT: We're out all day with T-ball and a birthday party. Not sure what we're going to do for dinner.

SUN: Family BBQ: Asian Burgers (turkey for the girls, beef for the boys), yummy-bok-choy-salad (I use splenda instead of sugar...sooo good), & baked sweet potato fries (never made this last week)

MON: T-ball night - Hotdogs, beans, & chips

TUES: ST spinach-and-feta-stuffed-chicken with whole wheat Orzo salad (tomato, cucumber, & feta in a balsamic vinaigrette)

WED: ST carne-bistec-colombian-steak over rice with a tossed salad

THURS: ST asian-glazed-chicken thighs Brown rice with tons of Asian steamed veggies

FRI: Pizza/leftovers

Thurs: Honey crunch chicken, roasted potatoes, burnt broccoli
Fri: Buffalo chicken pizza, salad
Sat: Ducks game!

Friday: PW Herb Roasted Chicken, Homemade Biscuits, and Steamed Broccoli

Saturday: Bangladeshi Beef Curry, Mixed Vegetables, and Basmati Rice

Sunday: Spinach and Cheese Ravioli in Marinara Sauce and Mixed Green Salad

Monday: Chicken and Guacamole Wraps, Baked Fries, and Carrots

Tuesday: Beef Curry Leftovers

SAT - (didn't make last week) warm steak salad with gorgonzola and asparagus

SUN - BBQ ribs with cornbread

MON - Roast chicken with rosemary, lemon & honey served with couscous and roasted broccoli

TUES - Fresh tomato, mozzarella & basil pizza served with homemade caesar salad

WED - Roast chicken thighs with lemon, potato and asparagus

THURS - Wagon wheel pasta with pancetta and peas

FRI - Tilapia fish sticks with dipping sauce, sweet potato fries & salad

Mon- BBQ chicken, corn bread, cucumber salad.

Tues- Taco Tuesday.

Wed- Chicken francese, mash.

Thurs- meatloaf, asparagus, leftover mash.

Fri- Shrimp, tomato salad.

Sat- take out.

Tues.- crockpot sweet balsamic pork, baked rice and peas

Wed.- baked chicken taquitos, mexican bean salad

Thurs.- greek style pork tenderloin, toasted pita, tzatziki, cold orzo salad with feta

Fri- out with friends

Friday-Family bday party...we ordered Chinese

Saturday-Friend bday party...went to a local pub

Sunday-Was at a communion

Monday-Grabbing something quick

Tuesday-My mom is cooking Italian for my actual bday

Wednesday-ST southwestern black bean salad with chicken

Thursday-Chicken stir fry w/ fettuccine and broccoli in a very light sage brown butter sauce

Saturday: Picked up sushi from Roppongi on the way home from Belmont.

Sunday: Stopped for a drink and a meat and cheese platter at Vittorio's at around 3pm for a snack and had ST Crockpot Chicken Ala Criolla for dinner over rice and beans.

Monday: Leftovers from last night since we stuffed our faces with proscuitto, soppresata, salami, etc. Chat Icon too close to dinner last night.

Tuesday: Buffalo burgers with sweet potato fries, celery and carrots.

Wednesday: ST Coconut Chicken Salad

Thursday: ST Arugala salad w/ Penne, Beans, etc

Friday: Homemade pizza with prosciutto, fresh mozz, roasted peppers on whole wheat crust.

Saturday: Cinco De Mayo feast. Fresh guac and chips, grilled chili lime shrimp tacos, tostones, and whatever else I think up. And of course margaritas and Coronas.

I am SOOOO uninspired this week.

Sunday: MIL's

Monday: Meatloaf, Mashed Potatoes, Gravy, Green Beans

Tuesday: Lemon Thyme Roasted Chicken Breasts, Burnt Broccoli, Cous Cous Pilaf

Wednesday: Barbecue Pork Ribs, Corn on The Cob, House Salad

Thursday: Spaghetti, Sauteed Veg, Marinara Sauce, Garlic Bread

Friday: Porterhouse Steak, Baked Sweet Potatoes, Sliced Tomato, Garlicky Asparagus

Saturday: it's my 5th wedding anniversary! And my Birthday! I'm going to an awards ceremony for my son and planning on ordering out.

Sure.. but it's really basic! LOL

I mince about 10 cloves of garlic, add olive oil, salt, black pepper, lemon juice (about 2 lemons) and a little paprika and poultry seasoning. I do a quick fry of fresh thyme (a little bit of olive oil in a pan, get it screaming hot, drop in a few sprigs of thyme for a minute and then remove thyme). Put the fried thyme in the mixture you just made and mix well. I use a mini-prep to homogenize.. but you can do it just as well with a spoon. Put your chicken in the roasting dish and rub the mix all over your chicken breasts (I use bone in and skin on.. but I suppose it would work with boneless/skinless). Take some fresh (non-fried) thyme and scatter it around the roasting dish. I also take the lemons that I squeezed and put those halves in the roasting dish.

Roast at 375 until cooked through.
