Mexican Fiesta

Can anyone help me out with a Mexican menu for a Mexican fiesta?


Does anyone know a Mexican place who caters in Babylon area?

I did a fiesta for my birthday last year.

Taco Bar
-Corn taco shells
-White/whole wheat flour tortillas
-Cheese (Monterey Jack, Sharp Cheddar and Pepper Jack)
-Shredded lettuce
-Chopped onions
-Chopped tomatoes
-Roasted pork shoulder (bought a either a Boston Butt or a picnic shoulder, rubbed it with Adobo, Sazon and a bunch of other spices, braised in a pan with Spanish onions, Habanero/Jalapeno/Cubanelle peppers under foil and shredded when done)
-Ropa Viejo (which, technically, is Cuban but I love it so much; I followed this recipe and did it in the crockpot)
-Shredded Mexican chicken (poach boneless chicken breast in water flavored with onions and peppers, then shred when cool; Add onions, garlic, chopped tomatoes and taco seasoning)

Side Dishes
-Cilantro lime rice
-Black beans
-Yellow rice with pigeon peas

Salsa Bar
-Black bean and corn salsa
-Hot queso
-Tomatillo salsa
-Pico de gallo
-Traditional mild salsa
-Guacamole
-Cholula, Yucatan and Frank's hot sauces

Dessert Bar
-Chocoflan
-Margarita Cupcakes
-Coconut Tres Leches Cake

We also had homemade White Peach and Red Cherry Sangria, a Tequila bar and a Margarita bar as well.

Here are some ideas that you can incorporate into your mexican fiesta:

Drinks:
-Sangria (I like white sangria with lots of fruit like oranges, peaches, grapes)
-Margaritas
-Variety of Mexican Beers

Appetizers:
-Quesadillas (you can have plain cheese ones or sausage and cheese or chicken and cheese)
-Chicken Lime Avocado Soup (so good!)
-Guacamole and Chips
-Salsa and Chips
-Hot Queso and Chips
-Black Bean Salad (black beans- whole, with lime juice, jalapenos and red onions)

Main Course:

-Fajitas (I like when there are onions, red and green peppers and mushrooms with the meat)
-Tacos
-Burritos
-Paella

Side Dishes:
-Spanish Rice
-Beans

Toppings to have:
-Shredded Cheese
-Guacamole
-Salsa
-Sour Cream
-Jalapenos
-Shredded Lettuce
-Hot Sauce (I prefer frank's red hot)

Desserts:
-Tequila Key Lime Pie
-Fried Plantains
-Cinnamon Churros with Caramel Ice Cream
