OMG! thank you everyone!!! Theresa! you rock!!!! as always, you are an amazing help!! i am printing those recipes out now and adding them to a binder i am creating. they are awesome! i love casseroles as they are so easy to clean up after! also, i have a crockpot but am challenged when it comes to using it so i would welcome your ideas with that! THANKS AGAIN!!!
Some of what I posted is for crock pots.
I have my crock pot cookbooks in front of me right now. Instead of retyping I'm going to try to see if I can get the recipes from the web and just post them.
no,no do not re-type! thats too much work! if you just tell me what you make in there i will google it or search myself. you have done so much already and Lord knows you don't need another job to do! thanks so much!

Again substitute pre-chopped frozen when you can for the veggies... (saves a lot of time on prep and cleanup)
Pasta Primavera
A rainbow of spring vegetables tossed with linguine can be served as a starter or as a main course. For a heartier dish, add chicken or shrimp.
Serving: 6 Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes
INGREDIENTS: 1 16 oz package linguine, uncooked 1 cup peas 1 cup broccoli florets 1 cup cauliflower floret 1 cup chopped yellow bell pepper 1 cup chopped red bell pepper 1 baby carrot, peeled and julienned 1/2 cup shiitake mushroom (or canned mushrooms) 4 fresh basil leaves (Oh please, substitute for 1 tbsp. dried) 2 cloves garlic, minced (I have pre-chopped garlic in oil in my fridge and substitute a tbsp. for each clove) 1 cup Parmesan cheese, grated
DIRECTIONS: 1. Cook pasta according to package directions; drain.
2. Heat oil. Add remaining ingredients except Parmesan.
3. Saute over medium heat for 3 minutes.
4. Toss with pasta.
5. Sprinkle with herbs and Parmesan and serve.

I am flipping through my binder LMAO because I just came across a recipes for:
stuffed lobster... yeah, it will be 18 years before my DH sees that coming out of the oven
and a few others that I am now about
Can you see me trying to kill lobsters (I don't boil them ) and Tah-win-ZAH's chasing them around the kitchen thinking they have new pets?

Mock Lasangna
MOCK LASAGNA
I usually make this on a weekend or overnight on a weekday.
1 lb. ground beef or turkey 1/2 lb. Italian sausage (I use Trader Joe's chicken sausage) 2 onions, chopped... again pre-chopped frozen 1 garlic clove, minced... again pre-chopped from the jar 12 oz. mozzarella cheese, shredded 1 (12 oz.) carton cottage cheese 1 (6 oz.) can tomato paste 1 small can chopped tomatoes 1/2 c. water 1 tsp. basil 1 tsp. salt (I never cook with salt, I leave it until the end and salt to taste) 1/2 tsp. pepper 1 1/2. parsley flakes 1 (10 oz.) pkg. lasagna noodles, broken into bite-size pieces... you do not need to pre-cook the noodles 3 tbsp. oil
***You can add frozen spinach, don't have to thaw and drain, just cut back a bit on the water.
1. Brown ground beef/turkey and sausage (If using Trader Joe's, it's pre-cooked so no need to brown it. Drain.
2. Place in lightly greased crock pot. Add remaining ingredients. Stir to mix thoroughly. Cover and cook on low 6-8 hours or on high for 3-4 hours.

You can make this with a steamed vegetable on the side and some cut-up roasted potatoes.
CROCK POT PORK CHOPS
5-6 lg. pork chops 1 can cream of mushroom soup 1 soup can water Salt & pepper to taste
Put ingredients in crock pot. Cook 4 hours on high.

Just be careful with all the campbells soups in recipes, they have a LOT of sodium and some of the lower sodium versions ahve some really weird unatural preservatives in them. Try to get an all natural version if available.
I have some 15 min or less recipes that might be easier.
What does DC like to eat? I can find some tailored to that.
I have literally 25 binders full of recipes and 2-3 dedicated to just Noah recipes.

Simple Spinach & Tomato Pasta
Ingredients:
* 1 tablespoon olive oil * 1 cup grape or cherry tomatoes, cut in half * 1 cup loosely packed chopped spinach, fresh or frozen in bags * 1 tablespoon minced garlic salt and pepper to taste (optional) * 2 cups cooked whole wheat pasta in small shapes like macaroni, rotelli, or small shells * 1/4 cup shredded parmesan cheese * 1 tablespoon toasted pine nuts (I toast them in the oven on broil)
****You can also add chicken or shrimp to this dish
Preparation:
1. Add olive oil to a medium nonstick saucepan or skillet heated over medium-high heat. After about 20 seconds when the oil is nice and hot, add the tomatoes, spinach, and garlic and continue to saute for a few minutes until spinach is soft and bright green and tomatoes are soft. Add some salt and pepper to taste if desired.
2. Stir in the cooked pasta and continue to cook and stir the mixture for a minute or two to heat up the pasta and blend the flavors. Sprinkle Parmesan cheese over the top and turn off the heat. Let the dish sit for a couple of minutes, sprinkle pine nuts over the top, and serve!
Makes enough for two.

Slow Cooker Beef Stew
* 2 pounds beef stew meat, cut into 1 inch cubes (buy pre-chopped or ask butcher to cut it for you) * 1/4 cup all-purpose flour * 1/2 teaspoon salt * 1/2 teaspoon ground black pepper * 1 clove garlic, minced- again, pre-minced in oil * 1 bay leaf (I never use this) * 1 teaspoon paprika * 1 teaspoon Worcestershire sauce * 1 onion, chopped- again pre-chopped frozen on onion * 1 1/2 cups beef broth * 3 potatoes, diced- or you can buy canned potatoes to cut the time even further but they will fall apart so put them in during the last hour of cooking * 4 carrots, sliced- you can use sliced, frozen * 1 stalk celery, chopped
DIRECTIONS
I mix the coating mixture for the meat the night before and have all other ingredients out on the counter with my measuring spoons.
1. Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
2. Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.

These are some QUICK, EASY things Ale loves:
Carrots and peas. Sloppy joes. Mashed potatoes.
Rice & beans Chicken or fish marinated in a little evoo and vinegar and grilled in toaster oven Broccoli
Pasta with cheese, or tomato sauce, and some frozen veggies thrown in.
I love frozen veggies because they are so easy, you only have to shop for them once in a while, and they maintain their nutritional value.
