Moms that cook their meals ahead of time...

like maybe on the weekend or something, can you please tell me what you make, and if you have a recipe, could you post it!

Allrecipes.com, search for thighs on rice, super easy, I make enough for 3 days

Add vegies, seasoninng, you can brown the chick if you have timme for better flavor, but it browns just fine in oven

I don't cook everything ahead of time, but during the summer we bbq on sunday and my DH will cook the meat for monday night---so this week he cooked a steak yesterday and then I throw together steak/cilantro/onion quesidillas. Or if he makes chicken I will make chicken wraps the next night. I also like to make soups in the crock pot that freeze well---like this week we will have split pea soup that I froze and grilled cheese sandwiches. HTH!

Soups, meatloaf, chicken cutlets, and pasta always do ok reheated. We don't eat a lot of leftovers in our house, but we do make lots of easy quick meals. We do lots of grilling, 90 second rice bags, frozen veggies, tacas, fajitas, etc...

I don't have recipes to post right now, but stuff that I make ahead of time specifically to freeze are:

- soups
- chili
- breaded chicken cutlets (they can be reheated to make a quick chicken parm, to use in sandwiches and wraps, to cut into strips and throw on top of salads, etc)
- meat loaf
- meatballs
- pasta sauce

Things to make just because you can eat them 2 or 3 nights (not to freeze):
- roast chicken
- roast turkey breast
- roast beef or pot roast
- pork tenderloin or pork loin roast
- double portion of steak.... cook half of it to a fairly rare doneness, and the next day you slice it thin, and can reheat it for a stir fry, steak sandwich, etc

I'm a SAHM but it's a myth that SAHMs have this big window of prep time for dinners... I love to cook and WISH I did. So I love having stuff in the freezer to pull out, or to make something that lasts the next couple nights.

Perdue makes an oven ready roaster chicken that is in a bag. All you have to do it slit the top and put it in the oven for 2 hrs or so.... It tastes like the best homemade roasted chicken ever and you had to do NOTHING to prep it. I usually throw in a couple of potatoes an hour before it's ready and BAM! Instant dinner! LOL (Oh and I make gravy out of a McCormick gravy packet. easy!!!)

I aspire to make more things, especially since the school year will be starting again. At the moment I really only make sauce, with meat and without.
